Johnny Cask has entered the building! Weve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours wont be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Firkin at Capones. Poured a medium amber color with not head. Aromas of floral hops & citrus / citrus rinds. Tastes of citrus, some caramel, and lighter floralness. The citrus became stronger as it warmed up and this one grew on me as I got through the glass.

Bottled. Amber coloured. Unclear. Dense beige head. ARoma of herbs, grass, caramel, vague fruits. Flavour of herbs, bread, flowers, grass, spice, fruits. Medium to full bodied. Ends on a flowery bitterness.

"interesting take an ipa (though id hardly call it a double). maple syrup makes for a pleasing and unique bittersweet finish. different than the brandied fruitcake of the 90 minute, but similar...and this is a lighter beer. More aggressively hopped than 60, and bottle conditioned for a different, dryer feel. pretty nice...not sure its worth the extra coin more than very ocassionally over 60 or 90...or Squall."

Pale orange colour with small white head. Fruity earthy farmyardy hops in aroma. Dry woody malty flavour with dry fruity apple citrusy hops. Mild bitterness. Low carbonation.

Pours hazy deep golden with a huge off-white head. Aroma has notes of malt, caramel, orange, citrus and pine. Taste is medium sweet and medium bitter with a fruity finish. Body is medium, texture is oily, carbonation is soft.

Bottle... Lightly-hazed amber ale with a large, fluffy, white head. Excellent retention. Dusty, grainy, musky aroma. Medium-bodied with lively carbonation. The flavor is acrid, earthy and medium bitter components I dont normally enjoy. However, a thoughtful hop bill and hopping schedule - along with a nice hint of maple wood - really sells me on this beer. Finishes mildly salty and modestly bitter with a whisper of sweet maple syrup. Im gonna be drinking more of this.

Bottle @ Dans house. Hazy, golden orange appearance with a big, off white head. Rich piney, a bit sappy hoppy, somewhat spicy, caramelized aroma with hints of light citrus fruits. A bit syrupy, light maple, sappy, caramel, piney, orange citrusy hoppy flavor. Pretty easy drinking.

UPDATED: MAR 25, 2012 Draft at CAH. Pours hazy orangy with off-white head. Nose is hopcitrus, tropical fruity, resiny, with peppery and caramel malt notes. Tastes very complex, with a big resiny hop flavor, tengarine, honeydew, black pepper, and some marmaladey sweetness. Well hidden alcohol, and this is as good as I figured it would be. Re-rate 25-Mar-2012. Bomber from RR St. Pours copper with frothy off-white head. Nose is piney hops, resiny, sticky, with caramel malt, hops, florals, and peppery flavors. Im kicking this down a bit because quite simply it doesn;t seem as good to me as either the 60 or the 90 separately. There is no synergism here, but rather this one seems less than the sum of its parts.
