COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Pouring at Get Real NY. Pours a just clear orange gold with a thin white head. Big earthy citrus, malt, and touches of booze. Big hops. Smooth caramel and fruit, chewy tropical fruit, malt and caramel. Smooth, sweet bitterness. Surprisingly good, and a lot better than I had been expecting.

Firkin at Capone’s. Poured a medium amber color with not head. Aromas of floral hops & citrus / citrus rinds. Tastes of citrus, some caramel, and lighter floralness. The citrus became stronger as it warmed up and this one grew on me as I got through the glass.

"interesting take an ipa (though i’d hardly call it a double). maple syrup makes for a pleasing and unique bittersweet finish. different than the brandied fruitcake of the 90 minute, but similar...and this is a lighter beer. More aggressively hopped than 60, and bottle conditioned for a different, dryer feel. pretty nice...not sure it’s worth the extra coin more than very ocassionally over 60 or 90...or Squall."

Bottled. Amber coloured. Unclear. Dense beige head. ARoma of herbs, grass, caramel, vague fruits. Flavour of herbs, bread, flowers, grass, spice, fruits. Medium to full bodied. Ends on a flowery bitterness.

Pale orange colour with small white head. Fruity earthy farmyardy hops in aroma. Dry woody malty flavour with dry fruity apple citrusy hops. Mild bitterness. Low carbonation.

Pours hazy deep golden with a huge off-white head. Aroma has notes of malt, caramel, orange, citrus and pine. Taste is medium sweet and medium bitter with a fruity finish. Body is medium, texture is oily, carbonation is soft.

Bottle. Orange malt and pine/grapefruit peel aroma. Hazy amber with large off-white head. Sweet orange/apricot malt and moderately bitter grapefruit peel flavor. Nice body.

Bomber. Orange-yellow pour with a big fluffy white head. Grassy hops, yeast, and some maple sweetness. Fairly aggressive carbonation. Good hop bite. Nice brew.

Bottle... Lightly-hazed amber ale with a large, fluffy, white head. Excellent retention. Dusty, grainy, musky aroma. Medium-bodied with lively carbonation. The flavor is acrid, earthy and medium bitter – components I don’t normally enjoy. However, a thoughtful hop bill and hopping schedule - along with a nice hint of maple wood - really sells me on this beer. Finishes mildly salty and modestly bitter with a whisper of sweet maple syrup. I’m gonna be drinking more of this.

Botella. Hazy orange colour with a huge beige head. Sweet old fruity like quite hoppy aroma. Good mouthfeel, sweet (old) fruity hoppy citrus like flavour.
