Johnny Cask has entered the building! Weve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours wont be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Interesting beer. The taste is way better than the aroma. I was getting a garlic kind of deli pickle smell here initially. That went away and got a lot of syrup sweetness which makes sense. Not much of anything else on the aroma for me. The taste though is a whole different story. Lots of sweetness from the syrup which is actually perfect here. It just works. Lots of hop bitterness but the balance is great and its awesome stuff.

Handpumped Cask at the Brewery 7.5%ABV. IPA. Nose has pine and spruce tips and pine. Malt and mash actually predominate the nose. Mouthfeel is full-bodied and light soapy, the cask and hand pump give this IPA a more fruity and juicy mouthfeel. Palate has smooth almost creamy malty flavor with barley bread, milled grain, and multigrain toast. Hops are pine needles, some pine sap. Finish is medium characterized by pine needles and sap. A medium aromatic, slightly bitter finish. Goes on Favorites List for purely sentimental reasons. Just a comforting mouthfeel with a very pleasant malty and almost soupy palate. Just AWESOME!!

Bottled. Old note. The aroma has fruity hops, some toffee. Bit hazy, orange coloured beer with a medium sized head. The taste is moderate-strong bitter with some toffee sweetness, fruity hops, citrus. Medium bodied beer. Nice.

cask at Capones, hazy golden orange color with small to medium head. Notes of ashy hop, pine, sweet crystal and caramel malt, dark fruit, and wood. No bright citrus in this india pale ale. Pass

Bottle. Pours hazy, with large suspended sediment, frothy, lasting head with decent lacing. Cant taste or smell the maple-and Im from Vermont, well balanced, appropriate but lingering carbonation, light to medium body, sticky sweet and lightly bitter finish. Not terribly exciting, probably wont have it again.

Taster at The Mondial de la biere Montral. The color is a hazy honey with a thick beige head. The aroma is of hops, and citrus fruits. The taste also of hops plus cereals and citrus fruits, malt and yeast. To my liking I prefer the 90 minute I.P.A.

Pours a hazy golden Amber with a huge head of white creamy foam and plenty of lacing. Aroma is lightly sweet citrus with some earthy notes. Medium thick body, smooth and syrupy texture. Taste is fairly dry, lightly sweet with some hints of spice like cloves or coriander. Leaves a numbing sensation on the tongue and roof of the mouth. Not bad, just not as flavorful or enjoyable as I had expected. ---Rated via Beer Buddy for iPhone
