COMMERCIAL DESCRIPTION
This beer is based on a beverage that may have been enjoyed by the Etruscans of Ancient Italy around 800 BC. For this one Sam traveled to Italy with Dr. Pat McGovern where they met up with Teo and Leo (Sams buddies from Baladin Brewery and Birra Del Borgo respectively) and researched ingredients from various Etruscan dig sites. The result of their research is a strong ale containing an Italian heirloom grain called Cappelli Senatore, along with pomegranate juice, raisins, and hazelnut flour, together with 3 types of honey: chestnut, wildflower, and clover. The brew was then spiced with several hop flowers, Gentian root and tree resin (think Myrrh) in the kettle. To simulate fermentation in a bronze vessel (which possibly would have been what the Etruscans used), we actually tied a bronze plate inside our modern stainless fermenter which was suspended in the wort as it fermented. The aroma is dominated by pomegranate and spice from the yeast. The flavor is an intriguing interplay between the tangy pomegranate fruit and nuttiness from the hazelnut flower. One can definitely envision sipping this unique brew while relaxing on the Mediterranean coast. Versions of this brew will also be made at Baladin and Birra Del Borgo with the same ingredients but varying processes.

Pours rusty burnt orange with a slight red tint. Aroma of honey, caramel, hay, mead, and a slight fruity hint (guess its the pomegranate). Flavor of honey, earth, grass, sugar, mead, slight fruit. Finishes slightly cloying with a gentle earthy, tangy, fruity aftertaste. Medium-heavy bodied, with high carbonation, but not a creamy mouthfeel. No real alcohol presence, but it is a little cloying. Good aromas and flavors, but I could go for a softer, creamier mouthfeel.

2013 750 ml bottle served in a large Scottish tulip glass. Wonderful aroma and flavor with lots of dark fruit notes and subtle spice notes. Near neutral bitter-sweet balance, although bitterness picks up in the aftertaste. Overall: interesting, complex, well balanced and surprisingly similar to a modern Belgian strong dark ale.

DATE: July 28, 2016... OCCASION: watching our wedding videos (thanks for sending the VCR, Jer!) while celebrating fifteen blessed years of marriage with Shana... GLASSWARE: Affligem goblet.... a dark copper, almost brownish opaque body challenges daylight... the off-white fizzles to a pencil-thin ring, while small clouds circle inside... apple, sour apple, grapefruit, vanilla, honey, grapes, and saltiness--safe to say, I havent smelled something like this before, although the aroma loosely approximates freshly unwrapped cassette tapes from the eighties... in summation, quite a cornucopia to process... upon first sip, surprisingly active in the mouth... medium-bodied, warming, and dry, with the honeyed finish that provides depth and length to the taste... demonstrative apple, honey and citrus and sour mash... ginger, raisins, dry nuts, and phenol hints develop a complex, almost unworldly profile, one that encourages sip upon sip... a beer worthy of the our milestone anniversary, I cannot help but think this beer is challenging in all the right ways, stirring fruit, spice and lesser elements to develop a taste akin to a Belgian ale but with drastically different draw and depth.. manageable at its 8.5% but formidable as well, with its spiciness erupting with every sip... on sale at A&P Liquors? yes, please...

On tap. Pours a clear light brown bronze with little off-white head and minimal lacing. Smells exactly like a saison. Tastes sweet, some unusual flavors, flowery, honey, actually very nice. The bitterness is mild and the aftertaste is extremely pleasant.

From notes. Split this one with Steve at Dans Downtown Tavern on July 01. The pour is a muddy amber color with a couple golden hues shining through. There is an incredibly fizzy white head that falls down and reminds me of a soda. Thats what it looks like. A beer shouldnt fizz like this. The aroma is incredibly sweet. There is a lot of dark fruit and spiciness to it, like its a dark fruit-inspired saison. A definite breadiness exists, and a light Belgian malt. The flavor is dark fruits and Belgian yeast. Its just really Belgian ale dominated. The mouth feel is terrible. Its thin, yet syrupy, with a very effervescent carbonation that lets the Belgian tendencies just jump off of the tongue. It doesnt end quick enough. This isnt my jam. Not by a long shot.

Leave is to Dogfish. Again you smell and taste every damn ingredient, which is amazing. Its a great beer, its perhaps a bit not my style thought because it tastes kinda regular after a while
