COMMERCIAL DESCRIPTION
This saison-esque science project gets complexity and fermentable sugars from the addition of two unique white wine grapes, sourced with our friends at Alexandria Nicole Cellars in Prosser, Washington. The first addition is the must of viognier grapes that have been infected with a benevolent fungus called botrytis. This ’noble rot’ reduces the water content in the grapes while magnifying their sweetness and complexity. The second is a pinot gris intensified by a process called ’dropping fruit,’ where large clusters of grapes are clipped to amplify the quality and distinction of those left behind. We then aged Noble Rot in one of our oak tanks for an entire year, making for a hazy ale that has a spicy white wine body and a dry, tart finish.

750 ml bottle. Clear brassy gold color. Small creamy white head. Tart, yeasty nose. Sweet, yeasty, hay-like notes. Tasty, vinous flavor with oaky notes. Complex flavors abound. Vanilla, oak, pear, apple, grapes and lime zest. Dry, tangy finish is refreshing. Some warming alcohol as well. Very nicely done.

Pours out a pale straw colour with a light white head. The nose is un-fucking-real. Spice notes, floral hops, slight barrel notes, viognier is mild, a bit of funk. I could literally smell this all day. Light earthiness, mild caramel, oaky notes, leather. This beer has a ton going on. I wish the beer underneath the viognier/botrytis/oak was better.

Very good, not quite as big a revelation as normal Noble Rot but close. Still has the lovely vinous qualities of the original, but seems sweeter and a bit rougher around the edges, weird considering the BA treatment. Tasty regardless; mild saison notes of clove and grass give way to a growing wine acidity, leading to a tart, yeasty back end with tons of woodsy bitterness tempered by soft vanilla. Finishes with a flourish of viognier complexity and farmhouse mellowness. Gets better as the pint warms, bringing out more grape notes and intensifying the dryness of the oak. Not all that pretty of a beer, more fizzy and yellow than expected for a saison, but the nose is a massive dose of yeast and grape. Excellent feel, a tad boozy but fluffy enough to meet farmhouse standards. Tasty brew, likely better than it scores.

Large Format - Crystal clear pale yellow color. Has a constant stream of tiny bubbles just like I would expect on champagne. Sting taste of white wine from the oak aging. I know it’s beer but it tastes pretty damn close to a white wine.

Bottle from K&L in Redwood City, CA. Aroma is white wine, light oak, mild fruit skin funk. Taste is thin, white wine vibes. Mildly refreshing but was hoping for more rotten qualities.

Pour out of bottle, hazy golden pour with white head, aroma brought notes of big booze, some white fruit, lots of grapey notes into a bit of oak, slight spice. Taste was a mix of wine, grapes, sweet sugar into some oak, slight bready notes, finishing fairly sweet, boozy.

Pours a straw yeallow with a moderate head that dissipates rather quickly. Aroma of herb, spice, honey, grapes, floral with a light oak note. Sweet flavor, reminds me a bit of a semi-sweet white wine. Light spice/floral with earthy notes with a touch of oak.. light/medium body. soft carbonation and slick texture. Was expecting more oak in this. Its interesting and has a lot going on.

Bouteille sans date achetée sur place en août. Robe dorée pâle claire avec un mince voile de mousse. Arômes de raisins blancs, pomme, pétales de fleurs, sucre de miel, litchi. En bouche, goût de raisin et pomme, léger citron et fleurs. Un côté de vin blanc sucré est perceptible. Également miel, litchi, mandarine, herbe. Finale plutôt brève avec un petit goût de sucre résiduel soyeux et un côté boisé et vineux. Texture assez légère et corps mince à moyen. Très belle bière au goût original et doux.

750ml bottle. Clear golden yellow with a frothy white head. Flavors are bread, honey, dandelions, grapes and oak with floral and herbal notes. Medium to full body, soft carbonation, smooth texture.
