Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

Very dark brown from a 12oz, with med. brown head, fast light lace. A lovely candy-malt aroma, very pungent with an edge of tree sap. Flavor is very original with bold malt filled with a sweet tangy woody, cedar-like flavor. Cuban coffee comes to mind. The palate is a bit oily and the finish hangs on like woodsmoke. Overall very pleasant

12oz bottle at home courtesy of Saeglopur. No obvious BB date. black color, small coffee-colored head. smells boozy, light cheese, liqueurish, dried fruits, light sherry, wood, bit milky, light cherry notes. bit weird but still decent smell. full body, soft carbonation, slick mouthfeel. tastes alcohol, glueish, rather strong on the cardboard, bit sherry, spices, peppery, overly ripe fruits, malt liqueur like, dried fruits, some raisins, nutty, marzipan, light wood. finishes lightly alcoholic with notes of marzipan, raisins, light cardboard and peppery notes. not a bit fan of this one. bit of a booze bomb with some off flavours that lacks balance.

Bottle ( from beergium), Pours dark brown-black with brownish head. The head stays for a long time. Aroma is sour, fruits, strawberries, malt. Flavor is sweet and sour, wood, oak, booze, fruits, berries, strawberries, booze, roast, malt, sugar cherriies maybe. Overall: more beer cocktail than proper beer, but I really like it. Nice sipper.

Draft. Dark Brown, nearly black. Mega-malty (roast malts, caramel, toffee, candy sugar, vanilla, some chocolate, wood). Mega-fruity (dried fruits, raisins, berries). Spicy. Very very sweet malty and fruity. Good, but too sweet for me. (2008)

A brown ale aged on the wood of the Palo Santo tree from Paraguay.

This beer pours dark brown, almost black with a two finger high, brown, creamy head.

Nose: Caramel malt, chocolate, wood, roasted malt, soy sauce and molasses.
Taste: Caramel, but, brown sugar, wood and alcohol.
Mouth: Full body, Smooth and complex texture. Soft and creamy.

A beautiful beer!

Almost inky black with a tan head that thins quickly. Caramel, chocolate, molasses, malt and cedar wood on the nose. The palate is fat, unctuous, smooth and pleasant. This is a big beer. Its heady and slightly sweet. Personally I would make it a tad more bitter but this, while not my type of beer, is very fine indeed. Careful with the 12% alcohol.

09/2015 bottle from West Side. Pours a deep brown with a tiny beige head that dissipates quickly. Brown sugar, molasses, wood and coffee nose. Fudge brownies with caramel, pretty rich mouthfeel. Cacao & brown sugar finish with a hint of vanilla and caramel. Where is the 12%? This is way too smooth. Great effort from DFH!

On tap @ Coopers. pours dark thick inky brown with thick mocha head that laces heavily. Aroma is heavily roasty dark chocolate malt, big woody/oaky flavor, port, soy sauce. Taste is clean big roasty chocolately malt, dry dank woody flavors, rich soy sauce lingers on the finish. Unique beer, really unlike anything else out there. As expected from Dogfish. Ill admit too, the unusual wood does add something here.
