pours a pale yellow color with zero head. aroma is wheat and bread. carbonation is pretty active. slightly sweet and spicy. very interesting brew. kind of dries out my throat. pilsener-esque indeed. if no one told me what this beer was i’d probably think it was just mediocre but considering all of what into this it’s a pretty cool idea. not bad but not all that impressive. big recipe small beer.
DATE: August 8, 2016... OCCASION: Birthday number 40, finally and forever in the books--a beer this ancient might be required!... GLASSWARE: Victory Nonick... first, the bottle erupted in pent-up effervescence immediately upon opening... a flourishing cascade--a storm!--of bubbles envelops the glass, spiriting a body that is honey gold in complexion and hazily opaque in its vision... the head is off-white, slightly creamy and hastily forming into an uneven, almost beachlike froth... first scents include apple, pear, chamomile, suntan lotion, and ginger... sandalwood is also appreciable... palate is soft, dry and unengaging, almost flat, with a little carbonation... the hopping process doesn’t yield much strength or depth... gingerbread, light cinnamon, honey, chamomile, and apple are soft, whispering hints that invite next sips with a sweetness unlike an ale I can recall... the honey, ginger and chamomile make this a nice dessertif... like a cold tea, this beer catches one off-guard, but its uniqueness is both a blessing and a curse: sweet and bitter in varying degrees, syrupy and arid in equal turns... something like my first forty years of life? Pours a clear, dark golden orange color with apricot edges and a two finger frothy, pillowy white head that quickly settles into a thick, lasting ring. Very good retention with sporadic streaks of soapy lacing left behind.
Earthy, musty aroma with a strong floral presence. Some grassy, barnyard funk with straw and hay along with flower petal, caraway seed and sweet caramel malt. I’m not familiar with most of the ingredients but the wild yeast and floral chamomile and farro notes stand out. Not much of a hop presence but there’s some faint light fruit. Sweet pale malts underneath as well with some caramel, biscuit and apricot.
On the lighter end of medium body with a slightly tart,funky yeast presence that dominates the flavor. This was really strong in the nose and stands out here as well. Grassy and herbal with resinous hops, straw, damp hay and wild bugs followed by floral rose water, sweet malts, light fruit and booze. Somewhat dry, chalky and earthy with sunflower seed oil, caramel malt, toffee and biscuit toward the end of the palate. Some dark and light fruit esters and boozy sweetness as well but there’s not much heat. I would have guessed higher than 4.5% but it’s still pretty easy to drink. Decent complexity but some of the flavors clash with each other. Not the most flavorful beer but its an interesting experiment and they successfully captured the wild Egyptian yeast. Dogfish head rocks another one. Taking the brewing style back to the ancients for another interesting take on a brewing style. Love it.

Score another one for Dogfish Head! A 2011 bottling I decided to crack open. Drinking at about 49 degrees.
Super lively upon opening with a near foam over. Pours a dehydrated piss dark yellow/gold with a light head that lasts for a few minutes before retreating with heavy lacing. It’s the hardest beer I’ve ever had to pour -- as slow as possible to avoid a 6 inch head.
The nose stung once like a spice but mellowed into a malty, bready, herbal with a slight fruit element treat. The zatar really comes through. The chamomile is clearly a factory and maybe that is why the finish and palate is a tiny bit cloying for me at first (I don’t enjoy chamomile).
As it is opening up I really love this brew, the palm fruit is apparent and it’s completely refreshing.
I suspect some of the ratings are due to drinking this way too early, let is sit a few years!

Pours a hazy golden-yellow with some sediment and a head that disappears very quickly. Coulf have been a little more carbonated but an interesting beer. "the base of this beer seems to share some similarities to another DFH 25 ouncer, Pangea...light yellow, fizzy, spiced. I was drawn to this because I like chamomile in beer and while it was present here, it was overshadowed by the fruit. A refreshing, interesting beer, but it was fairly simple, and had the flaw of being too prickly in the mouthfeel for my taste. For far less, DFH has better beers."

Draft at Monks Cafe. Hazy amber pour with a large white head. Some wet lace. Very unusual taste. First impression was it tastes strongly of garlic shoots and spring onions. Chamomile. Nutmeg. Cardamom. Golden raisins. Tea leaves. Heart of palm. Oregano. Chanterelles. Coriander. Honeycomb. Tastes like an Egyptian Bizarre.
