The idea for this beer germinated way back in 2003 when the three guys (Sam from Dogfish, Greg from Stone and Bill from Victory) formed the BUFF alliance (Brewers United for Freedom of Flavor) - a noble endeavor with the goal to highlight the passion and camaraderie of the American craft brew movement.
So, BUFF didnt really do anything (beyond talk a lot of talk) until 2010 when the three brewers finally got together to jointly brew at beer at the Stone Brewery. Saison du BUFF will first be brewed at Stone and then replicated at each of the other two breweries - same recipe, same ingredients, three different breweries throughout 2010.
Plans call for Saison du BUFF to be a 6% alc/vol Saison brewed with parsley, sage, rosemary and thyme. This beer will be brewed three times, once at each brewery using the same recipe. The expected release dates for each brew are as follows:

Bottle. Slightly hazy, bright golden with a fluffy off-white head. Lacing is fairly thick. Aroma of citrus, herbs (I love rosemary), straw, Belgian yeast, and spice. Herbal, spicy, yeasty flavor; a little bitter. Medium bodied, smooth, a touch dry. Very nice.

Pours a bright golden yellow with fizzy head. Aromas of tropical fruits and some citrus peel. Funky orange/lemon peel flavors with a nice woody funk.

Pours light lager light yellow with a big white head that laces. Nose from the bottle was kerosene (!). Yeah, I know but if this is what these herbals do, try again. Or, its a funky saison yeast. In any event, it was strange and the nose continued in the glass. Taste was attenuated saison with herbs. The beer is dry as a saison should be. The after taste is lingering bitterness. At the end of the drink, the nose filled the Weihenstephaner weiss glass - nice since most beers dont. I got used to the nose. Must be the 6.8% ABV :>). Last year I brewed seven saisons with various spices and different yeasts and none of them had a nose approaching this. 12 oz bottle Brewed on 2/18/16 More cans!

Tap...spicy and dry with a earthy herbal presence this complex and funky elixir made me feel healthier just by drinking it. Great stuff.

Im pretty sure this is what Im drinking and not the other two; it clearly comes in a Stone bottle, but the bottle says Dogfish Head first, and all the other stuff matches up. Pretty good beer. Very herbal, some sharp but not overpowering hop bitterness, faint rosemary aftertaste. Not your everyday saison to be sure.

I poured it from the bottle into a pint glass. It pours golden with a nice white head and lacing. The aroma was herbal, earthy, and citrus. The taste was lemon, coriander, herbs, and hops. There was nice carbonation. The subtle sweetness was balanced nicely with the bitterness. This was tasty and refreshing.

Pours a pale gold with a light white head. A sweet citrus, pine, wheat, yeast, and spices. A sweet citrus hop, fruit, and pine taste with heavy wheat, yeast and grains.

12 oz bottle picked up at Elevated for March Madness consumption. Commonshawn and samadouche in the house. Much debate on which version we should rate but settled on this variety based on order of brewery collaborators and ABV. Light golden appearance with hints of orange. Good froth with quick dissipation. Aroma of herbs dominate the nose with an earthy/grassy quality. Taste has all the elements of a traditional saison with coriander and spices coming to the forefront. Little bit of citrus and grassy characteristic. Mouthfeel has a good tangy bite to it. Feels like a very professional effort. Kind of like they put too many herbs into the equation and the end result is strange. Ill probably rebuff the opportunity to try this more than once.

12oz bottle from elevated with commonmac during March madness. Dark gold with small white head. Weird smell of beef stick. Must be the herbs. Oily and bitter. Atypical beer herbs throughout. Felt like I was drinking a roast. Pretty bitter for a saison. Kinda weird. Didnt really like it.
