COMMERCIAL DESCRIPTION
Cette cuvée, sélectionnée depuis 1997 par l’Elysée et très appréciée de notre ancien président Jacques Chirac, est avant tout une cuvée de dessert, idéale pour accompagner les tartes aux fruits. Cependant, comme une vendange tardive, avec un sucre résiduel élevé, elle conviendra également à l’apéritif ou autour d’une bonne galette des rois.
(les pommes de cette cuvée sont conservées près de 3 mois sous abri. Ratatinées au moment du pressage, le taux de sucre du moût au pressoir est exceptionnellement élevé). Dégré d’alcool faible d’environ 3%, Garde 3 à 5 ans. Récolte 2010 épuisée, prochaine récolte dispo début Avril 2012 !

Robe or, reflets ambrés. Nez qui explose de notes de pomme compotée sur un fond de fruits secs et de caramel. Bouche à l’attaque ample, riche, puissante, une bulle onctueuse et une longueur impressionnante pour un cidre. Très bel accord sur la tarte.

Weak off putting aroma, good apple smell, but with an astringent quality, fortunately not very strong. Clear golden color slightly opaque, but not cloudy. Great dry apple flavor, primarily a red apple subtlety with the tartness of a good green apple especially in the aftertaste. Very carbonated, which goes well with the light flavor and body.

750ml bottle 7/24/15 (Courtesy of TerryR)-36° in Lager Glass-Pours a clear golden with a small white head and huge carbonation. Aroma of floral, apple, and slight funk. Taste of apple, sweetness, bitterness, and slight oak. This light cider is easy drinking and very smooth.

Bottle sample. Poured clear orange copper color with a minimal fizzy head that lasted with good legs. Medium sweet apple and fruit aroma. Medium body with a smooth texture and good legs. Medium sweet apple and yeast flavor with a medium sweet finish of moderate duration. Solid drinkable complex cider.

750ml bottle, shared by brandon. Clear golden color. Few chunks of yeast in the bottle. Good thin white head on the surface that retains well, leaves loose lace. Good fruity fresh juicy apple aroma. Soft, lighter carbonation, dry finish. Moderate sweet taste, light tart. Has a nice juicy red apple flavor, the kind of apple I prefer. Excellent cider.

750mL c&c 2012 ed. Clear bottle. $25 from P St Whole Foods DC. Cork rockets out of the bottle, CAUTION!! Pours with excessive carbonation, tepid pour yields an IPA like head that really never fully dissipates. Easily the best appearance for any cider I’ve ever seen. Glowing, full haze peach color. Leaves some lacing. Seriously? Nose is really getting there for premier Norman ciders like Ferme du Lavoir, Cave de Mirande, and Benoit et Sylvie Noël. Aroma is pure starfruit and peach juice, similar to peach sour beers. There’s a musty cellar, barnyard note is unmistakeable as Norman farmhouse yeast with touches of orchard Brett. Taste is juicy starfruit, mildly bitter apple skin tannin balance, very dry in the finish. Encompassing, fresh apple skin and flesh engulf the sides and roof of the mouth. Very impressive cider. If very fresh, I have no doubt this cider is in the top leagues of French cider and thus world cider.

Thanks to GT2! Beer pours with heavy carbonation, head similar to an IPA. There’s little head retention, but that’s to be expected with a cider. Hazy golden-orange color. Aroma is almost like a peach lambic, juicy peaches and fresh flowers, also a little dusty. The taste, wow. It’s pretty dry, which I really enjoy. Taste is peaches, some light citrus, a fresh sweetness but nothing cloying. Again, that dryness really balances it out really well. Absolutely well done.
