My Bottom Line:
Citrus zest, funk, wooden allusions and cranberry juiciness gel in this highly creative Saison-like creature.
Further Personal Perceptions:
-A healthy head of foam sits atop the hazy straw blond.
-The maple syrup contribution can be imagined in the wooden flavors and light sweetness, but I would not have guessed it were it not written on the label.
-The citrusy component and incoming dryness combine for refreshing results.
-This one has matured well and seems to be ready for many more months in peak form at this point in its life. Early on it was rough and intense, but after 6 months or so it has bloomed into a cohesive Saison.

Lightly hazed copper pour, finger of white head with excellent retention and lacing. Mix of sweet fruit, and funky yeast aroma. Could be pomegrabite but comes across cherry. Murky orange pour, with a large off white head. Aroma is is fruity, and tangy, with some nice pepper notes, and subtle herbs and hints of lemon grass. Nice mouth feel, soft carb. Finish is slightly tart, and grassy, with alot of stone fruit and lactic tart notes.

On tap at St. Augustine’s during 1st 45 taps annual event with Alex and Josh. Pours a slightly hazy golden with some white head. Aroms is sweet, fruity, spices (from regular Saison). 750ml capped bottle pours amber in color with a finger of white head that leaves some spotted lacing on the glass. Aroma is cherries (not getting pomegranate) with some caramel and hints of yeast. Taste is a cherry tartness with a malty sweetness with some spicy and yeasty notes in the finish. Light to medium bodied with moderate carbonation. Apparence : Dorée orange aux reflets jaunes, belle mousse blanche, carbonatation élevée et rapide, belle dentelle.
Nez : Poire et pêche, agrumes, aspects floraux, poivrée. Les brett sont aussi évoquées en trame de fond sous forme de paille et de boisé légers.
Goût : Poire et pêche, céréales et malt avec une touche sucrée, peut-être mielleuse, petite touche d’alcool.
Sensation : Corps mince, effervescence élevée, piquant sur la langue et au palais, finale bien sèche avec une petite amertume marquée, légère chaleur d’alcool.
Bref : Bière intéressante où les levures dictent le bal : les fruits présents, le poivré de la levure saison, très atténuée au corps mince, un petit côté rustique des brett sans être dominant… Peut-être pas la plus intense, ni la plus complexe, mais intéressante.
