COMMERCIAL DESCRIPTION
Un Stout Impériale russe ‘’rétro’’ dans sa conception, incorporant beaucoup de malts bruns, peu de malts torréfiés, des malts caramel, ainsi que 2 sortes de malts fumés (bois de cerisier USA, et Bamberg). Un élevage en barriques de whisky écossais (Scotch) lui apporte une race, une profondeur et une élégance indéniable, avec quelques fûts de la région d’Islay dans le lot conférant de subtiles nuances tourbées complétant les malt fumés. À boire entre 12 et 14 degrés celsius, au coin du feu, en fumant la pipe tel un/une gentleman/gentlewoman.

Tasting at Sergey’s

Black color with large brown head. Roasted malt, the carbonation feels through the nose, the mouthfeel is dry; the flavor base is sour dark malts, with a hint of booze, but not necessarily whiskey. Nice.
Friends say it’s infected.

Teinte noir foncé avec une petite effervescence. Une épaisse mousse brunâtre recouvre ce liquide avec une effervescence marqué. Un nez chocolat, figue, avec un soupçon de café. On ressent des vapeurs légèrement alcoolisé! En bouche, c’est léger. Du cacao en poudre, fruit noir, et comme arrière plan une bonne touche de whisky! C’est quand même... vraiment pas mauvais!

It pours very dark with a tan head. The aroma has roast, berries, light sourness and barrel. It has a full body with with semi sharp carbonation. The taste has chocolate, cherries, raspberries, peat, raw wood and alcohol heat. Thanks to gregwilsonstl for sharing another interesting beer.

My Bottom Line:
Fruity alcohol, chocolate and roasty acidity converse in this silky Barrel-Aged Imperial Stout.

Further Personal Perceptions:
-A sizeable head of brown foam is established atop the impenetrable darkness.
-Whisky mostly appears in the second half of each sip.
-This is one of the most elegant Imperial Stouts brewed by Dunham yet. Neither brash nor super bitter, it instead lays a suave malt character nicely juxtaposed to barrel character.
-The roasted acidity in the finish replaces green hop bitterness wonderfully, making everything smoother.
-Licorice and thai basil are whispering throughout.
-The nose could focus on the malts a bit more, in my tastes.

375ml bottle chez Sergiy. Pours a rich black opaque colour with a frothy tan head. This bottle must have had an infection as it gushed upon opening. Nose is somewhat roasted with a sweet fruity and sour note with some whiskey barrel. Taste is similiar with a slight sourness, for an infected brew, still not bad.

Tasting with Alex and Brian. 375ml bottle from Louis-Philippe (thx, Brian!). Probably the bottle is a little bit infected. Aroma is whiskey barrel, some sourness, and fruitiness. Taste is the same with roasted malt notes. Not bad.

375 ml bottle from the brewery on June 23, 2016. Black, medium beige head. Aroma of roasted malt and sour fruit, some sweet notes of coffee. The taste is about the same but drier, notes of red wine and whisky, dry bitterness with little alcohol. A nice mellow imp stout!

Bottle thanks to Youri! Pours opaque black, large brown head, creamy, dissipates slowly, nice lacing. Aroma is roasty, anise, whiskey, molasses. Flavor is light plus sweet, medium bitter, biting roastiness, anise, light acidity. Medium body, creamy. A bit on the harsh side.

Du côté écossais celle-ci. Elle est belle. Une grosse mousse qui se résorbe lentement et qui ressuscite lorsqu’on l’agite un peu. Au nez, immédiatement le foncé; c’est-à-dire, le café noir, le cacao, chocolat, les grains grillés, rivalise avec le Scotch. De forte vapeurs d’alcool en émanent. Il y a aussi des effluves boisées, herbacées et légèrement fumées. En prenant la température ambiante, ça sent le toffee. Une effervescence qui doit faire face à la viscosité du liquide, aide à cerner un éventail large et subtil de saveurs. C’est sucré, boisé, alcoolisé, fruité par moment. Une amertume soutenue vers une finale imposante et immortelle. (Emb. Avril 2016) (1965-170916)
