This is a beer already brewed in the 1950’s by Dupont Brasseries. As Dupont has extra fermentation capacity now, Olivier has the luxury of crafting some new brews, or re-creating some old specialties.There were two test versions of Monk’s Stout, both at 5.2% abv. One was dry and roasty, and another is said to be a little more rounded. Monk’s Stout is available in 33cl bottles and 20 liter kegs in Belgium.

Bottle - 330ml. Pours a black body with a thick beige foamy head. Well balanced malty/hoppy aroma with plummy and subtle woody, coffeeish hints. Taste is slightly dominated by hoppy flavors. It carries roasted cereals notes and ends with a dry, bitter/grainy finish. Enjoyable.

Pours black with a dense and persistent slightly off-white head. Some lacing. Smell of gently roasted malts and light red fruit notes among a base of what is something in between butter and milk chocolate. Nice but not too vivid. Taste follows the aroma but is a little more intense. Overall it’s quite on the sweet side but a gentle roasted malts bitterness and hint of refreshing acidity are bringing enough balance. Light to medium body with light carbonation, it’s very easy, quick and slightly silky. A not too typical stout, expecially in being quite refreshing: Overall pretty enjoyable, though not too intense.

Rating #2396 - 2016.03.28 - Bottle 4 of 5 from the forgotten box. Pours a dark black with a rich tan brown head. Aroma is roasty, sweet cocoa, molasses. Sweet chocolate and light roasty, earthy bitterness with some light yeasty estery notes in the finish. Tasty.

Schuimkraag mooi maar snel weer verdwenen. Zowel qua aroma als smaak redelijk scherp: eerder aangebrand dan koffie, dunnetjes, nogal eenzijdig ook. Mondgevoel dun, carbonatie overdadig. Hoedanook een zeer aangenaam en verfrissend bier met een bescheiden alcoholgehalte.

Robe noire, mousse abondante, aérée de grosses bulles, beige rosée. Nez café, salaison fumée, très légères notes lactiques. Attaque très carbonatée, qui se dissipe sur une amertume noire de chocolat noire, café. La suite de la bouche se dérobe très vite pour laisser une impression d’un goût comme dilué. Texture aqueuse, corps très léger. Un stout pour la soif, suret, très unidimensionnel. Sur-carbonaté.

0,33l bottle. Hazy dark colour with lots of yeast drops with medium lasting beige head. Aroma: Interesting. Very different from a typical stout. Quite funky with matured cheese notes with hiding caramel tone. Taste: Wow. The taste also very different from a stout. More like a lambic. The yeasty caracter dominates the sip. Has a tart start with a medium bitter mouthfeel. The coffee tone shows some stout caracteristics but otherwise it’s quite different. Medium body with fizzy carbonation. Medium lasting bitter finish. Very different from the UK/USA stouts, it’s like a lambic/stout hybrid.
