COMMERCIAL DESCRIPTION
This is a beer already brewed in the 1950’s by Dupont Brasseries. As Dupont has extra fermentation capacity now, Olivier has the luxury of crafting some new brews, or re-creating some old specialties.There were two test versions of Monk’s Stout, both at 5.2% abv. One was dry and roasty, and another is said to be a little more rounded. Monk’s Stout is available in 33cl bottles and 20 liter kegs in Belgium.

Bottle: Nose is musty, slight sweet tone, Belgian yeast, slight licorice: underwhelming. Taste is licorice, dry Belgian yeast, earthiness and a little smoke in the finish. There is an almost brett like note in the middle with a little salt. Mouthfeel is much to thin. A confusing beer, which is not very good.

Bottle from Terre De Boissons, Centre Commercial Cite Europe, Calais, France. Dark brown-black with a thick white head of foam. It has a slight tart red fruity flavour followed by roasted coffee and oak on the bitter-sweet dried fruit finish. Very good.

Bottle from a Carrefour in Bruges. Pours hazy black with a small, tan head. Smells of toasted bread. The aroma contains (slightly burnt) toasted bread, smoke, dark chocolate, even tobacco. It tastes very light sweet and light to medium bitter with a toasty, smoky finish. Medium body, slick/watery texture, fizzy carbonation. Solid, but I can’t be too enthusiastic about it.

Versée bien brune sans trouble avec une mousse beige assez épaisse. Dès qu’on pose le nez au dessus du verre, pas de doute, c’est bien un Stout ! Le nez est impressionnant sur le cacao amer, le café à la Turc, les malts rôtis et leurs notes de pruneau, de bois fumé, de figue et de banane séchées, de datte, de résine, de cuir, de caramel, de sirop d’érable, de cassonade. Le froment apporte une petite touche gourmande supplémentaire rien qu’au nez avec des notes de crêpe Bretonne. Vraiment un excellent nez de Stout, tout ce qu’on cherche sur ce type de bière ! En bouche, carbonatation moyenne, alcool simple avec 5.2% qui font juste le job sans chichi, texture ronde, corps moyen sans trop de mâche mais pas sur l’eau pour autant, belles levures à l’attaque avec leurs notes boisées mais surtout, bonne amertume qui monte lentement en puissance sur les gorgées. Assez peu de sucres sur ce breuvage, donc on a la pleine expression des houblons amerisants en plus des malts torréfiés. Le côté crêpe Bretonne est pertinent en bouche, il ne manque plus que le jambon, l’œuf et le fromage ! Le final est sur l’amertume, avec une pointe d’astringence au palet et les céréales mi-rôties mi-crues sur les papilles, avec une belle longueur. Pour ma part, il me manquera la petite pointe gourmande qu’un alcool et des esters plus solides auraient sans doute amené en rehaussant les saveurs. Mais ne boudons pas notre plaisir, c’est un superbe Stout dont le seul défaut aura de ne pas être impérial... Bouteille 33cl, Boissons du Monde, Saint-Egrève.

Gedronken met Mitchell bij Olivier, simpele stout, weinig diepgang, weinig romigheid, weinig koolzuur, geur is zoet en fruitig, smaak is droog en koffie- achtig, kan er verder niet veel over zeggen ook een beetje verstopte neus

Bouteille. Noire à reflets et forte mousse à grosses bulles. Nez : rôti, caramel, fruits noirs, raisin. Bouche : effervescente en diable, fumée, fruits noirs/secs. Finale sèche et légère amertume. Rien de transcendant.

Bottle of 33cl, in a Pint glass; from the fridge. Beautiful dark brown colour, great stout aroma. Then... no taste. The state is really"stout", but like a mix between a stout and a pils. No aftertaste.

I bought this bottle at Bierhandlung in Freiburg am Brisgau. I drank it at home, relax before to sleep. In my opinion, it is a correct stout but it is not extraordinary. The color is black, not so creamy for the style, white and brown foam, average carbonation. The taste is a bit sour for a stout, some roasted malt, coffee, small hint of vanilla, a bit watery, it could have a bit more character for the style. The taste is constant during all the time that you drink it.
