In 1991, the brewery decided to revive an old custom harking back to the 14th century when there were no means of refrigeration. Beer was then traditionally brewed in early December and stored over the winter under naturally cool conditions. The first barrels were only opened in March, as the days started to become warmer. It has a fresh, springlike bouquet with dominant tones of malt and grains. It is made using a top fermentation yeast, malted barley and newly harvested Alsation hops. With 5.4% alcohol by volume, it is a pure malt beer that is highly refreshing. It has a fine white head and clear golden colour, a dominant hoppy taste with a hint of fruitiness. Best served between 5 and 6°C.

Bottle. Pours a light golden color with white head. Crisp, straw aroma. Flavors of straw, hay, and bread. My overall opinion of this beer is that it is pretty pale and lacking in flavor. Very drinkable but not overly exciting.

Pours a cloudy yellow with a touch of amber. No head, just a few white bubbles. Sweet flowers and malts, and a little earth on the nose. Taste is simple and clean, with wheat, honey-like sweetness, and minimal dry hop finish. Balanced taste. After taste is something like pellegrino, clean and fresh, but not too exciting.

Draft at rattle n hum with baron streets. Pours an amber with thin white lacing. Aroma is light and sweet. Mouthfeel is thin and smooth with notes of sweet wheat.

Bottle from kalundborg vinhus. clear yellow, small white head. malty, slightly frutiy (apple), faint white wine aroma. some hints of wood. flavor is grainy, hay, malts, faint flowery swetness. A bit messy, true to the style so to speak..

Poured a slightly hazy yellow color with a smaller white head. Aroma is a bit skunky with some lemons and grass. Taste is a little bit like cardboard with some skunky flavors. Lots of lemon in the finish with other light fruit flavors that make it a little sweet. Some creamy yeasty notes too. Overall ok, but not a great biere de garde.

On tap at Bier International, Harlem USA. Gold body with white head. Nose malty and skunky. Taste also malty, and spicy, but not much to it. Kind of dissapointing.

Originally rated March 2008. Seasonal offering at the LCBO, with a best before date that is written: 14/12/2008 on back label. Pours a clear golden colour with a white foamy head, that disappears at a medium pace. What is clearly noticeable, is that this brew has hardly any carbonation, and after a few minutes, no bubbles are to be found. Malt is dominant in the aroma, with a little grass and mild honey. The mouthfeel is pretty flat, but has a little stickiness in the mouth. Grain malt is most of the flavour, with the mild grass and honey coming out in the aftertaste. The ring of lacing stays all along. Not a bad beer, with a light difference to other beers that look the same, but nothing too outstanding either.

(bottle). Clear gold color. Small off white head, with good retention. Light musty aroma with light sweet honey. Sweet caramel flavor, with light toast/malt and moderate alcohol. Avg duration. Smooth finish. Slick texture. Moderate carbonation. Good lacing.
