Bottle-conditioned, naturally sparkling cider fermented in French oak puncheons. Made from a blend of traditional and heirloom apple varieties grown within 200 miles of our cidery.

50cl bottle pours a clear light gold with some foamy, white head. Nose has apple... dusty couch... not much. Flavor is sweet, mild honey, apple. Watery finish.

Bottle from City Swiggers on the UES. Ommegang anniversary glass. Sparkly, translucent gold body. Leggy. Smells of acidic apple wine, oak, & tart, still green fruit. Taste is incredibly dry & minerally. Aspirin bitterness. Rose? Saline. Boosy. Light residual yeast. Harsh carbonation. Gets a little better as it still & warms up. Sorely needs some bittersweets blended in.

Clear pale golden with a small white head. Aroma is juicy apples, some minerals, grapes. Taste is tart, dry and fruity. Finish is tart and fruity with apples, lemon, some grapes, dry minerals. Light bodied, sparkling carbonation.

Bottle bought through the Eden cider club. Pours tiny sparkling pale golden with a small fizzy goldenish white head that quickly dissipates without leaving any trace on the glass. Smell is fruity with tart apples, star fruit, minerals and lemon peal. Taste is fruity. Mouthfeel is sparkling, dry, very tiny tart and light bodied. Finish is fruity with tart apples, star fruit, paper and mineral water. Heavy sparkling, tiny papery but also decently fruity. Quite good even though I’d prefer something fruitier.
