Bomber from WB. Clear gold pour with a short white head fading to thin and leaving a fine, even lacing. Nose is tart fruit and some saison-like funk. Medium-light body with vigorous, fine carbonation. Ripe apricot, sweet apple, pear, black pepper and some earthy funk. Tartness is mild (less so than the bomber I had the month it came out), almost more of a fruity Saison than a Sour/Wild.. An accessible sour with a mild Brett character. Would be interesting to try this one again in 6-8 months. One of my favs in the Apocalypse series.
22 oz bottle. Bit of foam when opened I guess due to the Brett. Drink with a taste of over ripe lemons , coriander and mangos. Not bad considering the age on this beer. fluffy (2461) - St Petersburg, Florida, USA - FEB 21, 2016

Sample at the Super Bowl Viewing and Beer tasting on 02/01/2015. Pouors a hazy dark golden color with a thick white head that burns away gradually. Partial rings of lacing on the glass. Aroma of fruity hops, malt and slight brett. Medium body with flavors of vine fruit, brett yeast, florals and malt. The finish is mildly sour with a fruity aftertaste. Decent overall.

22 oz bottle pour split. #11 in the series and listed at 6% abv. Pours a cloudy golden yellow color with a fizzy head. Slightly sour citrus and light banana like aroma. Flavor is easy drinking, with light hops, and a yogurt like yeast flavor. Cool finish with brett yeast and mild hops. Interesting take on the style. From a bottle this pour is a golden color with a white bubble head.A lot of c02, tart and does have a persimmon taste.I opened this beer thinking it was going to be plain and it’s not.I find this beer to be good as well I have been eating a lot of persimmons lately which helps it. Draft at St. Augustine. Copper color thin head. Huge dried persimmon aroma. Soft silky palate, big bitterness and astringency fm huge persimmon, big tannins reminiscent of tea. Brett is just starting to kick in, but leaves its imprint by being bone dry. Is more bitter than sour. Would be curious to try this at different stages of its age and development. I totally understand this beer. It invokes the spirit of the persimmon, it’s not something you would want to drink regularly, just like you would not want to eat persimmon regularly.
