Bomber. Pours a hazy cantaloupe hue with a collapsing white head. Aroma is initially doughy, then turns barnyard funky, fruity (persimmons? not sure what they smell like)--smells pretty exotic. Taste is lightly sweet before turning savory and lightly tart. The brett imparts dusty old books; I’m also getting a bit of banana custard. Carbonation is fairly soft, body is slick. Pours a cloudy, golden amber color with a thin ivory head that disappears quickly.
Smell is a little hoppy and quite sweet, with a strong scent of tart yeast. Some herbal scents as it warms up.
Taste is far from what one might expect from a sour; a little tart, but with a strong herbal backbone. A little bitter, but not overwhelming.
Goes down smooth with just enough carbonation to avoid being flat. Not thick, but not too watery.
Overall a very tasty, if not a little safe. Never gets too tart, and doesn’t really push the envelope. But tasty nonetheless. hayduke (5600) - Eureka, California, USA - APR 12, 2013
The beer was shared with Strykzone on Facebook Chat. It poured a bright gold with a beige head and good lacing. Very attractive. Nose of light ripe persimmon and brett. Medium body and a smooth clean mouthfeel. Flavor is sour and tart, with earthy malts and lots of the persimmon. Very tasty. From bottle. Hazy full golden color with lots of head. Aroma is tart funky yeast and sour fruit. Taste is fresh persimmon, light yeast tartness, apple, and grain. Finishes with an apple aftertaste and a light pucker.

Bomber from Hayduke. We had it together via facebook chat. I rolled the bottle before opening to dislodge the sediment. It poured hazy dingy golden and had a big almost white head. The aroma brought out brett and some lighter fruit. Brett was also tasted but it was not overdone. Fruit was the persimmon. Malts were rich and earthy. Later this kind of morphed into a saison with light brett. Ron has sent several from the Apocalypse series and they have all been interesting and unique. This is another one. Thanks Ron! Draft at St. Augustine. Copper color thin head. Huge dried persimmon aroma. Soft silky palate, big bitterness and astringency fm huge persimmon, big tannins reminiscent of tea. Brett is just starting to kick in, but leaves its imprint by being bone dry. Is more bitter than sour. Would be curious to try this at different stages of its age and development. I totally understand this beer. It invokes the spirit of the persimmon, it’s not something you would want to drink regularly, just like you would not want to eat persimmon regularly. Draft at sb. Pours a cloudy pale amber with very little head and just spotty lace. Mild pulpy tree fruit nose; i wouldn’t know a persimmon if it stood up in my soup but that must be what’s in the aromatics here. Creamy medium body with lively carb. Nice tangy fresh fruit juice quality. Good showcase for the featured ingredient. Cantwell’s deft touch with adjuncts strikes again.
