The first of our three part Saison series. Saison’s were traditionally brewed on farms in the French speaking region of Belgium for their workers. Ferme de La Ville or “City Farm 15” is brewed with Belgian Pilsner, malted wheat, and locally gathered honey. French Farmhouse yeast brings aromas of spice and earth. The body is light with complex flavors and a dry refreshing finish. 6.75%alc/vol 25 IBU’s

12oz pour of the ’Provision’ @ Baileys Taproom. Pours a murky amber with small white head and lots of lacing. Aroma is reminiscent of a sour-- maybe a little honey at the end. Flavor is a beautifully complex mush-mash of a lot of awesome stuff I can’t identify. My palate is pretty well mashed. Moderately carbonated, sour finish that mellows and lingers. I might have to come back tomorrow to try this again. Fantastic brew.

Tap at the production brewery. A: Very cloudy copper in color with a thin creme color head. N: Straw, peppercorn, esters, hay, honey, grapefruit, wheat, green apple, lemon zest, lots of funkiness, a bit of diacetyl, spent grains T: Lightly sweet, funky, tart. M: Light body, no alcohol, soft carbonation. O: Alright. I’d like it if they dried this out more; it feels too heavy and dense.

From notes. Enjoyed at Corbet’s house during a tasting on October 24. 750 mL bottle. The pour is a darker golden yellow color with a thick white head that slowly pillows down to a thin cap. The aroma is really acidic up front. There is a nice bitter citrus zest and a dusty barnyard. A light herbal hop and hint of spicy yeast brings up the rear. The flavor is much of the same. There is a light fruit, tart, and then the spicy yeast and an earthy malt moves in. There is a light floral hop on the back end that I’m not crazy about, but I don’t hate. The mouth feel is a little heavy with a softer carbonation and a light floral hop and dusty barnyard funk on the back end. It’s a decent saison.

Pours lightly murky orange with an off white head. The aroma had caramel, must, spice, honey slickness and a hint of sourness. It has a medium/thin body with prickly carbonation. The taste has must, wood, earth, off fruitiness, some sour notes, pepper and rustic leaves. Good, but a bit confusing. Thanks so much to Hannont for passing this one along.

2016 bottle. Hazy pale pour, fine-bubbled foamy white head. Good retention. Aroma: dusty, herbal, citrus, light clove and honey. Taste: super toasty, cereal grains, dry with a lightly acidic finish. Medium- body, average carbonation, slick texture, lasting cereal.

Bottle. Pours a cloudy orange with thick off white head. The aroma is funk, yeast, spice. Medium mouth, citrus, light spice, brett, dry finish, very good.

750ml bottle pours out a hazy golden topped with a bubbly head. When this was fresh it was more saison forward as time has passed and Brett took over. It is now more wild and sour. Nose is Brett tartness citrus lemon wood and perfume. Taste is more of the brett tartness citrus and wood. I like it more now then went it was fresh. I love how time and bugs change beer.

Something may be off with this bottle. Aroma is lemon pledge chemicals possibly acetone or some such thing but when mixed with the tart lemony flavors comes off really odd. Acrid and hard to drink but it smells ok.

Bottle: Milky looking, orange & burnt golden body with a creamy off-white head. Aroma of damp hay, tart lemons, lots of yogurt & some mild lacto notes. Mineral flavor with lots of spicy yeast, farmhouse dampness, lacto yeast, tart lemon, light apple, & some strange funky spices in the finish. Semi-creamy body that could use a little more carbonation.
