COMMERCIAL DESCRIPTION
Jacob Spears, our 6th Great Grand Uncle, is credited as the first distiller to label his whiskey "Bourbon." He built his distillery in Bourbon County, Kentucky in 1790 - 203 years before began brewing. While obviously a bit too late to produce Uncle Jacob’s wash, we’ve instead created something far more complex. In his honor, we present this robust, silky smooth, full-bodied and altogether extremely American rendition of an Imperial Stout aged for 6 months in the very finest bourbon barrels. This explains a lot about our penchant for big brews! It’s in our blood!
Brewed with Rocky Mountain Water, Malter Barley, Flaked Oats, Hops and Yeast.

Bottle @ Hamilton’s. Oily black pour, coffee tan head, viscous. Molasses hit strong, bourbon, roasted malts, chocolate, oak, hints of dark fruit. Alcohol well hidden aside from a burn, body is thick. Top of its class.

On the bottle is writen 17.1% abv. Pours oily black, opaque, with foamy brown head, which transforms itself to a ring around the glass. Aroma: oat flakes, roasted grain, dark malts, vanillin, tobacco, oak, sherry-like bourbon...flavor: sherry-like bourbon- first two, three ships are tremendous, with huge bourbon impact, then there are noticeable roasted grain, dark malts with notes of coffee, dark chocolate, vanillin, tobacco. Finish is dry, slightly acidic (of roasted), alcohol warmth is intense. Body is full, texture smooth, carbonation is low. Huge imperial stout with great aging potentials.

Possibly the biggest, thickest beer I’ve drank. My father would say it could be "drank with a fork". Pours jet black with a brown head. The beer costs and sticks to the glass walls. Aroma is reasonably alcohol forward, with chocolate and vanilla notes following. Oak and bourbon notes to finish. Taste follows similarly, with thickness prevailing, tastes similar to a cholocate cookie. Alcohol is hidden quite well considering the strength. That being said, I’m sure my review would be much less coherent if I finished my glass before writing. Quite the beer.

Bottle from SB. Pitch black, brownbeige head. Bourbon, molasses, syrup, prune, dark fruit, a bit of chocolate, brown sugar in aroma. Smells sweet and lovely. Thick oily mouthfeel, full bodied. Sweetness but hotness from the alcohol involved. More dark chocolate in the taste, molasses, syrup, raisins also. What a beer!

Bottled on February 19, 2016; sampled on April 22, 2016. Pours black & oily; almost no head except a beige ring. No lace. On the nose, coffee, chocolates, roasted malts, toffee, raisins, and definitely a lot of bourbon. A strong bourbon alcohol flavor is present from beginning to end. Vanilla, molasses, and chocolates in the front. There’s also some dark dried fruits, roasted malts, and toasted nuts in the middle. It finishes off with a nice bittersweet coffee/syrup flavor. After it warms up, the bourbon alcohol flavors get even stronger, bringing a ton of syrupy sweetness forward. The six months in the bourbon cask made a huge impact on this beer’s flavor; it’s almost as if someone poured a shot or two of bourbon into this beer! Silky smooth, kinda sticky, full-bodied, no carb, mild finish. Admittedly, the first couple of sips are very hot from the strong alcohol presence. It’s a big, malty, sweet behemoth of a beer and no doubt delicious...but not an easy drink at all.

Bottle. It poured a black color with a tan head. The aroma was of coffee, dark fruits, chocolate and roasted malts. The taste was similar to the aroma with more coffee, dark fruits, more chocolate and roasted malts. Very tasty.

Nose is sweet bourbon, chocolate, caramel, candy, taste is very sweet, chocolate, huge caramel, maybe little vanilla, sweet bourbon, a bit peanut butter, could be thicker and more complex. I would prefer less sweetness. Although palate is very pleasant with uniquely balanced bitter-sweetness, dominating caramel, long lasting aftertaste. But I know beers with more complex and interesting and longer aftertaste and thicker body. Very good dessert beer category.

Apparence : Brune foncée au versement, noire dans le verre, léger col brun, peu de rétention et de dentelle.
Nez : Bourbon intense, vanille, sucre brûlé, toffee, fudge, sensation d’alcool dans les narines.
Goût : Big boozy chocolate bourbon flavors… ouin, c’est ça qui m’est venu en tête. Épicé en finale, touche de sucre coupé rapidement par le baril et l’alcool bien ressenti. Légère amertume qui parvient tant bien mal à se frayer un chemin à travers tout ça. Tout de même, c’est équilibré.
Sensation : Corps assez dense, présence des saveurs élevée en bouche, effervescence faible, longue tenue de la finale.
Bref : Voici un excellent exemple de la façon d’équilibrer une bière dépassant les 17% d’alcool. Certes, l’alcool est bien présent. Par contre, celui-ci fait partie d’un tout avec le malt, le fut et les houblons. C’est étonnant comment malgré l’intensité des saveurs et la présence d’alcool, cette bière finit par bien descendre et ne jamais devenir lassante. Un beau mariage qui laisse présager une chose : excellente avec moins d’un an dans le corps, elle doit l’être autant vieillie.
