Nothing quite like a special bottle of Stille Nacht on Christmas! Pours nearly flat with a cloudy, rusty golden color. After a minute in the glass, a thin head with large bubbles materializes. The aroma is subtle and feels locked up... like it will break out with age. Right now, it is filled with cherries, oak, vinegar, caramel, and some moldy funk... incredible. On the palate, the beer has an almost oily texture that is cut through by the mild carbonation and the acidity of the flavor profile. The flavor is complex as notes of sweet red fruit, wine barrel (shock), lemon mix with others in a fleeting fashion... almost ethereal. Finishes mildly tart, but I’d never call this sour. Killer beer right now and will age with the best of them, for sure.

Nice fizzy-creamy longlasting head, slightly hazy. Aroma is slightly dry sour-ish mineraly, oak, hay, minerals, yeast, fruit stones, sour grass, light malts, dried fruits, grape peel, candi sugar, bark, alcohol, hints of butterscotch. Taste is slightly dry sour-ish, oak, sour grass, grape peel, yeast, minerals, butterscotch, hay, fruit stones, light malts, alcohol, mild vinegar, bark, citrus peel. Medium bitterness, slightly dry sour-ish mineraly mouthfeel. Nice.

Bottle, picked up in Amsterdam by me and miles back in my suitcase and carefully stored for this special event: my 10,001st rating. Shared with my various tasting group members. Capped and corked, not a gusher, so good start (plus Lori says the cork smells like brown sugar!!). Medium orange-amber, pillowy white head. Beautiful aroma of cooked pears, maple syrup, candied orange, very reminiscent of a tawny port. The palate maintains the same oxidized notes (in a pleasant way), with a sultana sweetness and vinous complexity. The finish is tart and dry and woody. Just amazing.
