A bilberry (European blueberry) lambic brewed exclusively with/for Ølbutikken, Copenhagen, Denmark.

2005 Vintage (batch 1) - First release ever, only 50 bottles released, 75cl bottles. Gold foil.

2007 Vintage (batch 2) - The first release of 2007, 37.5cl and 75cl bottles. Black foil.

2007 Vintage (batch 3) - The second release of 2007, 75cl bottles. Gold foil.

2009 Vintage (batch 4) - The first release of 2009, 37.5cl and 75cl bottles. No foil. Label reads "2009".

2009 Vintage (batch 5) - The second release of 2009, 37.5cl and 75cl bottles. No foil. Label reads "2009 II".

2010 Vintage (batch 6) - 400 litre barrel with 100kg bilberries added. No vintage on the label.

2011 Vintage (batch 7) - 400 litre barrel with 100kg bilberries added. 37,5cl and 75cl bottles. No foil. Label reads "11".

2012 Vintage (batch 8) - 400 litre barrel with 100kg bilberries added. 37,5cl and 75cl bottles.

UPDATED: DEC 5, 2014 28-10-2012: Bottle (750 ml) 2009. Traded by urbancaver, thanks Cam! Pinkish/red with purple reflects (the last pour was deep purple) with a small persistent white/pinkish head and good lacing. There was still plenty of blueberries in the aroma with the usual Cantillon barnyard and wild notes and hints of wood. Unlike the other ratings I’ve saw here, I found the blueberries to be more present (and fresher) in taste than in the aroma. Agressive Cantillon-style barnyard/leather taste with nice wood notes. Dry, acidic and astringent mouthfeel. Good carbonation. This is the best fruited lambic I’ve tasted so far (closely followed by Saint-Lamvinus)! 9-4-9-4-18 = 4.4

21-04-2013: Bottle (375 ml) 2012 vintage. Shared by Jeffo, thanks. Hazy reddish purple with a small pinkish head and little lacing. Aroma is of blueberry skin with light citris/lemony notes. Quite smooth on acidity. Taste is also of blueberry skin with some barnyard notes and a light but sticky herbal finish. Medium body. Medium carbonation. Slightly dry finish. If I remember correctly, the blueberries were much brighter in the ’09 vintage we had last year. It’s still very blueberry forward, but not explosive. Really a long lasting blueberry skin aroma and taste. Good balance. Very nice lambic, just not as mindblowing as I remembered. 4-8-8-4-17 = 4.1

Bottle -- immense thanks to Rob for trading this one! This makes a pretty aggressive claim as soon as you pour it out -- it’s purple/blue and gives off a powerful smell of funk, barnyard, and berries. I’ve never had a bilberry before, but I’ve spent enough time in New England to have eaten my weight in blueberries, and this has a truly unique flavor combination of true lambic funk and an earthy, fruity blueberry flavor. Not as sweet or as sour as a lot of new-world fruited sours; this is instead a really balanced and complex fruited lambic. Wow.

Sample from 375 ml bottle at Brewskival, thanks a lot! Slightly hazy bluish reddish with pinkish head. Aroma has light blueberry, funky notes, lactic, slight acetic, fruit, lemon and more funk. Taste is funky and sour, bretty notes with lactic and acetic, blueberries, red berries, citrus and slight yeast. Good stuff but a bit overrated, there are way better cantillons

2015 vintage. Deep blueberry color with a single finger head. Aroma is light and tart with hints of musty fruit. Dry finish with hints of blueberry. Nice carbonation, not too biting. Slight grain taste with lingering fruit notes. Hints of sourness, but nothing overwhelming. Very balanced. The fruit is just amazing in this. I’d like to try it fresh one day. Medium bodied.

A 375ml bottle at Himmergiet of the 2015 Vintage. Poured into a mini wine glass. It poured a slightly hazy ruby red dark purple colour with a one finger pinkish purple head that had good retention and sparse lacing. Aromas of blueberry, tart, funk, some acidity and lemon. Tastes of blueberry, sour, tart and light funk. Light bodied with moderate to high carbonation. Overall, wow, this was just special. One of the best Cantillon offerings I’ve tried along with the Lou Pepe Framboise. It’s just too bad I missed the 2016 release in Copenhagen by two days as I would have loved to open another bottle.

2014 vintage at Himmeriget, Copenhagen. Aroma is tart and sour red fruits, bretty funk, barnyard, subtle blueberries, some wood. Flavour is quite tart and medium to heavy sour. Body is medium. Complex yet easily drinkable, lots of nice funky barnyard notes besides the tart and sour berries. Maybe not the ultimate Cantillon, but quite lovely.

Pours a burnt ruby red color with a small rose colored head. Berry, vinegar, funk, tart, wood and barnyard aroma and flavors. Medium light body and moderate carbonation. Berry, tart and funk finish. 2014 bottle from Himmeriget Copenhagen.
