COMMERCIAL DESCRIPTION
Igor Stravinskis’ Le Sacre du Printemps celebrates both the rebirth and bounty of spring as well as exploring the savagery of human superstition and ritual. With this masterpiece in mind I brewed a Rustic Saison using wild yeast and local honey. Like its musical and vernal inspiration, Rite of Spring is characterized by both delicacy and dissonance. The aromas of spring flowers and fresh oranges that leap forth from the glass are cast against immense earthiness and rustic funk from the wild yeast. Notes of soft fruits, toasty malt, and subtle honey sweetness dance gently around a pronounced bitterness, and ultimately fade into a bone dry finish. As the gloom of winter yields to rebirth and revelry, throw some Stravinsky on your turntable, crack open a bottle with your friends, and join us in celebrating The Rite of Spring! Oh, and please, no rioting.

Despite the waiter’s and my best efforts, the beer still came out pretty hazy. But a very pretty, glowing banana-skin yellow, well-carbonated with a large, thick white head that shows strong retention.
Tart brett acids in the nose are backed by a bit of sweaty, farmy cheesiness, limes, pineapple and light black pepper. A bit of tropical fruit and citrus from the hops is welcome, though this further builds acidity. Light vanilla and more pepper phenols sit on the finish, with a touch of dough and biscuits.
Lilacs and pineapple in the flavor. Heavy brett influences aren’t exactly subtle or terribly elegant, but the flavors are true enough and despite some breadiness from the yeast and waxiness/stickiness from the honey, it’s hard to not be pleased with all of this glorious tropical fruit, soft funk and bright acidity on the finish. You could criticize it by calling it a bit too punchy in its acidity, perhaps, with maybe a bit more citrus than needed from the hops, but fairly well-attenuated, tightly carbonated and with a soft, supple enough texture. Certainly not confusing this one with HF Anna, but I still enjoyed drinking the bottle and it went down easily.

Bottle sample at a tasting at Max’s place. Thanks Ariel. Clear gold with a white head. Aroma of funk, earth, flowers, spice, fruitiness. Dry flavor, earthy, fruity, spicy, with a bit of bitterness. Medium-bodied, well-carbonated.

UPDATED: JAN 25, 2015 Nice white head, lots of flavor in the nose, hay, grass, yes some Spring flowers. Malt too. Sits well under a creamy head. Interesting taste with a little too much earthiness, but this is forgiven in the complexity. Nice finish. I’ll try it again. The 750 did not last long enough.

UPDATED: JUL 27, 2014 750ml bottle pours a hazy orange with some creamy, white head. Nose is herbal, some soap, slightly vegetal, some orange rind. Flavor is lightly sweet, lightly floral, honey comb, herbs, orange peel, some 7-Up, soap. Finishes soapy, herbal and a little tannic.

Perfect spring beer to enjoy out on the deck. Bright mineral water, grassy earthyness, spicy hop character all blend nicely into a hugely quaffable saison that keeps me wanting more.
