Pours brackish and weirdly foamy then the foam is gone in a second leaving strange and random spots of carbonation. The aroma could be termed repugnant or if you are familiar with wine as compost, forest floor and wet leaves; which is perfect for something called "Bog". Flavors are very rich and savory, there is limited sweetness to this stout however layers of funk, mushroom, ash and cardboard bounce back and forth along the tongue. Palate, this is a tad thin and lacks a little added alcohol to push it up a level. Overall if you like weird beers especially brett or funk beers, this one will be up your alley; I think it’s a fine example of exploration and success.
Bottle at Syb Pig Club share. Small snifter. Pours a very dark brown with a thin off-white head. Aroma is earth, peat, smoked malts, fungus (mushrooms), leather. The taste was very earthy with peat, soil, cave, basement, swamp, etc. Medium body, light carb. Just not for me. Too earthy and the mushrooms were just not my story. Had off tap at gastropod restaurant at epic ales. Very black color. Aroma is of red wine vinegar, soy sauce. Sips low medium. Sour light fruit and smoke. Finishes out sweet and sour with a moist mouthfeel. Creamy oatmeal feel on the palate as well. Low carbonation. Probably a smoked stout if anything...then again, their beers are often innoculated in one way or another.
Pours near black with a solid tan surface sheet. Smells of smoke malts, but not overdone, leather, seriously lots of shiitake character, didn’t expect it to be there, some touches of graham and soil. I like the nose here, really complex and unexpected. Flavor is robust with roasted and toasted malts, some leather, more mushrooms, some raisin, some tartness on the end. Overall a good flavor also. Full bodied with silky feel and a moderate carb. Lightly dry finish. This is a nice, complex and cool beer. Totally dig it. Interesting. Can't say I've had any beer like this before. Don't smell it -- aroma is awful. Roasty stout, with a mushroom flavor, but the most applicable thing I can say is earthy. Try it once, for the experience!

This beer has a deep black color that can barely be seen through. The smell is very similar to the name, roasted, smokey and earthy coming through, mushrooms definitely present. Bomber from Malt & Vine. The twine under the wax is helpful. Pours dark brown with a creamy light tan head. Aroma is earthy sour! Good start. Med + body. Flavor is sour enough to be classed as wild/sour. It’s earthy, touch of coffee, fairly barnyard. Hint of smoke. But WTF is that coffee? Where does it come from? Bottle: Deep muddy brown, moderate frothy tannish head, fairly nice lacing. Aroma seems a touch sour, even a slight sweetened vinegar. Underlying smoke and soft earth. No yeastiness that I detect. Tart, fairly dry right up front, a touch smokey, even seems a bit woody. Has a soft earthinesss that I would imagine is the shiitake mushroom. This is rather unique, and very different much like most of these beers. I like this one in that the saki yeast profile is minor. Spritzy on the tongue. UPDATED: MAY 31, 2012 Extremely dark brown pour with a quickly fading head. Nose is smoky, full of peat, tart red berries, funky grape must, and has a light acetic twang to it. Taste is lightly sour and packs plenty of mossy, earthy, meaty, umami-like character (shiitake comes into play). Light body, fairly thin mouthfeel, with soft carb. Smoke, moss, and tartness linger in the finish. The first couple sips of this had me feeling disappointed (especially because of the price tag), and it definitely needs some warming up. Not a drinker, but a sipper. With a little patience and an open mind; this really opened up, filled out, and became increasingly cohesive. Not your average beer, for sure; but quite interesting and unique. My tasting glass is empty; but I’m having a harder time pulling my nose out of it now than when it was full.
