UPDATED: MAR 17, 2010 Pours an almost black brown with a large, tight beige head that persisted for quite a while. Aroma is earthy and toasty, reminds me specifically of the toasted brown rice in genmai-cha. The mushrooms definitely make themselves known, but subtly meld into the beer. The flavor is also toasty and earthy, with a slightly meaty, rich quality from the shitake. Finishes slightly peppery. I was impressed by how the earthy mushrooms are seamlessly integrated into this and enhance the beer, and by how easy to drink this is. Draft at the brewery. Pours a murky and somewhat grainy very dark brown. Dense, creamy, surging moussy head. Nice toasted caramel, wet earth, and tangy mushroom nose. Creamy medium body with pleasant carb. Beautifully balanced body--not at all heavy but has some density and savoriness to it, with the carb providing just the right structural balance. Earth, toast, nuts, caramel, and that vaguely gamey mushroom note on the mid palate. Maybe a hint of chocolate way in the background. Clean dry finish. Great beer.
