COMMERCIAL DESCRIPTION
The intense and complex sour character of this beer is developed in oak Foeders containing select cultures of Lactobacillus, Pidiococcus and wild yeast. The process is slow and delicate, regularly taking a year or more. Once our brewers have decided it’s ready, we blend the soured beer into hand-selected oak barrels with fresh peach puree, where it undergoes additional sour fermentation and aging.

Pour out of 375 mL bottle, hazy orange pour with thin to no head, fizzy. Aroma brought notes of big stone fruit, peach flesh, oak, vanilla, some lactic notes. Taste is a mix of tart and sour fruit, lemon, oak, into some peach, more oak, vanilla, finishing decidedly tart and dry. Its tasty, not complex and a bit harsh however.

Bottle at What The Funk V. Pours a hazy yellow gold with small white head that lasts. The aroma is strong peach flesh, funk, and oak. Thin body, tart peach, light funk, good.

12.7oz bottle ("Release #3: Peach)- Great nose! Sour funk with that subtle scent of sweet fruit. Straw colored with little carbonation. The taste is all that is promised. Rush of awe-inspiring sour with tinge of sweet. Very slight oiliness... Oaky and vanilla notes in a great spicy ending!
