Color dorado, translúcido, con capa de espuma blanca de tres dedos de grosor (buena retención). Carbonatación a tope (más sutil en boca). Textura acuosa y ligeramente chispeante. Aroma increíble formado por un montón de plantas y especias (la descripción comercial lista salvia, romero y tomillo; aunque también hay reminiscencias de albahaca, cilantro y hierbabuena). Frescura inusitada. Sabor frutal, fresco y refrescante, donde vuelven a hacer presencia todas esas plantas. Ligero amargor final (lúpulo bien medido). Seca. Hoooo-eee - subtle, this ain’t. Big resiny evergreen notes almost suggest pine at first, before resolving into (mostly) sage. But of course they’ve got rosemary and thyme in there as well, which begs the question: why not whack in a little parsley, and call it “Scarborough Fair”? Rating #2301 - 2015.01.12 - Bottle from CBI - Pours a hazy straw colour with a frothy white head, not much lacing. Aroma is of farmhouse yeast, very herbal (sage). Clean mouthfeel, medium carbonation, mild alcohol warmth. Taste is a crisp sweetness, tempered with herbal notes, mild sourness from the yeast. 650ml brown bottle. Cloudy and golden coloured, long lasting and creamy white head on top. Nose is herbal with sage and thyme and a bit of citrus. Taste has rosemary and thyme herbal notes - earthy and woody, background citrus, grassy notes, bit of yeast. Interesting beer. Bottle pour. Slightly hazy golden, large white head, creamy with good lacing. Aroma is indeed quite herbal, sage and rosemary prominent, perhaps a hint of thyme and black pepper. Flavor is light sweet, medium bitter, herbal and peppery notes dominate. Medium body.

UPDATED: NOV 29, 2016 A 22 fl. oz. bottle, Release #26, brewed on 11th March 2015 and packaged on 6th April 2015. Poured into a d’Achouffe tulip glass. It poured a bright but hazy golden orange colour with a just under two finger white head that dissipates slowly and leaves lots of nice lacing. Aroma is full of sweet orange citrus with touches of tropical apricot, lemon, orange marmalade and a herbal character (although I’m not sure if its sage, maybe thyme). Tastes of orange honey sweetness, sage, pepper spice, almond biscuit and a bouquet of herbs. Medium bodied with high carbonation and a dry finish. Overall it’s quite different to any other beer let alone Saison that I’ve tried. It’s perhaps a touch to sweet for me, but the biscuity, almondy, herbally finish is interesting. Bottle at home. Pours cloudy dark yellow with a huge, frothy and rocky off-white head, long retention with excellent lacing. Aroma is floral and fragrant sage, rosemary and thyme with earthy and spicy hops, farmhouse yeast and moderate cracker malt. Flavor is medium spices of rosemary, thyme and sage, moderate farmhouse yeast notes, medium cracker malt, medium earthy and spicy hops and bitterness with a dry finish. August 27th, 2014 - In addition to visiting the local breweries out in suburbia, my father and I have taken to a tradition of visiting Epic Brewing, where he has a special affinity for the brews, though he himself is not a picky taster. But something about Epic stands out to him, so we make the drive through downtown to get a mess of samplers. And today we begin our sampler parade with the Utah Sage Saison. Under the finger of thick foam is a slightly bubbly, slightly cloudy dark straw beer, which is an effective costume hiding the verdant, herbal, olive green scents and tastes inside. The nose is a breathtaking dive into a beautiful vista of the desert at sunrise, when the desert plants are fragrant with evaporating dew - sage and pepper, even green bell pepper, but mostly a wafting, calming scent of sage that sits with poise on the grain smells of the beer. Sage is woven beautifully in the flavor too, with a touch of sweetness and white grape for depth, and a nice, soft, foamy body that perfectly delivers the curious and untraditional sage. And the touch of hops bitterness works brilliantly, bringing some botanical bitterness to the herb that it may have lost in harvesting or cooking. Appearance was cloudy orangish golden with creamy white 2 finger lasting head, rings of lacing. Aromas are soft sage, rosemary, tangerine, orange, lemon with spicy yeasts. Taste are sweet lemons upfront then sage and rosemary come to play mid sip. Malt bready soft sweet backbone with just enough Belgian spicy yeast ending. Palate was creamy CO2 with light-medium body, then lasting aromatic drying balanced finish. Overall a wonderful flavorful Saison, try it.
