shared a 750 ml bottle with some family. Nice smoke on the opening. Poured into a wine glass. Deep butter and gold color with quickly subsiding bubbles. Steadu riseing carbination. Aroma is a yeasty funk and paper mill. Taste starts a little sweet but moves to dry right away. Bottle at Pdx 2013 cider summit - pours a cloudy golden color. Interesting aroma of grass and hay. Taste of sweet apple, slightly boozy.

Poured draught at Gingerman NYC. Pours slightly cloudy without much head, medium carbonation. Aroma of tart apple and straw. Smells like an orchard! Tast is beautiful, full bodied, balanced: tart apple with the slightest bit of honey. Really a fantastic cider.

Bottle with Ann. Pours a fizzy pale gold with lots of short lived head. Aroma has a lot of horsey brett character. Taste is a great balance of sweet apple flavors and a funky brett influence. Very carbonated, couldn’t drink more than one. Really good.

2001 edition. Pours a slightly hazy golden orange, with furious carbonation and a rapidly dissipating white head. Aroma is mostly apples, with sourness and wood. Taste is not surprisingly mostly apple, relatively little tartness, maybe best compared to a macintosh, has a gueuze-like feel, with some of the barnyard components, mildly acidic, and this baffling salty/ smoked bacon flavor near the finish, then drying. UPDATED: MAR 8, 2008 Great cider, carbonated like a chanpiegne. Sharp on the tounge at first taste, interestng on your palate. Well balanced. Airy, Flavor of sour apples. Pours an orange tan with a huge head that fades quickly. Aroma of tart and sweet apples, and a hint of vinegar. Flavor is initially a nice tart apple. 2000 vintage from a 1.5ml bottle. Pours a nice hazy golden. Very sweet apple on the nose almost like processed applesauce. Very carbonated mouthfeel with the sweet red apple coming through prominantly. This might have been a little over the hill, and I will try a more current vintage to re-rate if need be.
