Now here’s a higher priced cider that might be worth the trouble. A little dusty on the nose, which isn’t something I like, but also some light funk, which I do. Pours clear golden with a green-yellow hue. When poured, there is a medium, fizzy white head, but it quickly disappears. Instead the stunning amount of fresh bubbles surching towards the top, forming a new, continually regenerating white head. Aroma is great, lots of fresh, green apples as well as a slight funkiness of overripe red apples. High and lively carbonation. Flavour is wonderfully balanced between slight woodiness, heavy fresh apples, light funk and a general good balance. Wonderful.

Sampled at the 2013 Chicago Cider Summit. Pours a clear pale gold with a bubbly white head that starts at the edges and dissipates completely, visible carbonation. Aroma has musty apple with a combination of sweet and tart notes. Flavor is quite musty with more tart apples and a bit of funkiness in the finish. Pours clear golden with a white head. Aroma has notes of sour apples, yeast and sugar. Taste is light sweet and light sour with a dry fruity finish. Body is medium, texture is thin, carbonation is fizzy

Pours an insanely lively sparkling golden, more lively than Champagne, huge white head that instantly fizzes way, lemon golden, crazily lively brew. Nose is very raw barnyard & funk, brett, fermenting apples, mineral apples, raw apple skin funk, brett, wowza didn’t see this much funk coming from a cider. Taste is raw barnyard funk, insanely lively beer, apple skins, fermenting apples, rotting lemon, brett, hay, barnyard. So much carbonation & so much funk. Very unusual for me at first & quite challenging. Almost admired it more than I liked but it grew on me and I started appreciating a bit. Draft at Dutch’s in late June/early July this year. Pours a hazy golden with a hint of orange and no head. The aroma and flavor have sweet apples and pears, a nice tartness grows, some musty character shows, more interesting than most ciders.
