2008 on tap @ bangers and lace. Pours a yellowish gold with a white head that dissipates to the edges quickly. Aroma is full of fresh sweet apples with a hint of backing tartness. Bottle. 2007 year. Corked pops off rather easily and bubbles quickly start flowing up the neck. Poured quickly into a glass but still lost a tish into the sink. Cloudy pale yellow orange color with a slight white head. Apple aroma with an underlying funky note. Light mouthfeel with carbonation. Soft apple notes with a slight barnyard quality that slowing comes to be about mid drink and then lingers. Overall, not bad. Could us s little more funk. 750mL c&c. Pours a clear straw to gold with a fizzy white head that lasts for three seconds. Earthy apple skin nose..honeycrisp apples. Taste is sugary, honeycrisp apple heavy, clean and pure with no phenol character. No white wine vinous character thankfully. Almost an oily palate for cider. 2009 bottle thanks to GT2! Just starting to get into real cider, and man am I glad I’ve entered this realm. Nose holds a delightfully complex earthy and dry presence that mixes with complex apple skins, pear juice, and even a touch of unripe plums or the like. The flavor brings more of that wonderful dry earth tone that reminds me of an old-school saison, then melds into the fruity apple flavors, and finishes with a hint of mushroom and herbs that are certainly welcomed. slight funky rubber aromas and flavors the more age it gets. sweet, dry, hint of sour. really pleasant but a bit rubbery, again. the Organic definitely had more funky earth than the conventional.

Served on cask at The Birch in Norfolk, VA on 7/15/11. Pours a clear pale yellow color. No head when it got to be, but the cask is out of view so I didn’t see it poured. UPDATED: NOV 20, 2010 Tasted from a 375 mL bottle purchased in Boulder, Colorado. Pours a light hazy yellow-white appearance with a bubbly, sizable head. Aroma is strong, even away from the glass. Alcohol, apple and overall cider smell in the aroma. Light, sour, apple flavor that is more complex than the typical cheap American cider. Finish is not surprisingly dry. From a bottle poured a clear golden color with a good amount of head. Sweet cider flavor with a quick finish.
