Essence is an ice cider or intensified cider. We make it by allowing late harvest juice to freeze partially. As the juice freezes the water is separated out and the remaining juice is concentrated with high brix and intense flavors. Although ice ciders are wildly popular in Quebec and other parts of Canada, the Bureau of Alcohol in this country doesn’t have an ice cider category, yet. Essence is replete with honey, caramel, apricot jam and juicy apples. The 15% residual sugar is balanced by a lively tartness. This ice cider is impressive as dessert itself but can be spectacular paired with sweets such as crust-less Italian cheesecake, crème caramel or homemade cinnamon doughnuts. If you feel like keeping it simple, serve with fresh local Jonagold apples and Stilton drizzled with honey.

2011 bottle from the Union Square Greenmarket stand. Shared with family after Christmas din din.
Brandy glass. Vibrant, clear glossy gold body.
Lemon honey & caramel apple nose.
Taste is more honey, but now with a bit of rum & red apple tartness. Sweet wood. High acid. Lurking spice. A bit buttery going down. Lingering lemon honey finish. Thinner then expected.
Past bottles of this have been flabby. Maybe it’s just the aging, but this one drank pretty solidly.

Sampled at a Farmer’s Market in Ithaca. Fine this very sweet. Well made dessert cider, no flaws detected, but just too sweet for my personal preference.

Bottle brought by me to thanksgiving. Clear caramel colored. Nose is sweet Apple and some honey. Tastes of honey, caramel, vanilla and apple sauce. Not too sweet or boozy

Bottle brought to Vinny’s January 2013 tasting. Pours a deep, golden amber body with no head or lacing. Aroma is warm, apple pie. Mouthfeel is thick and syrupy with super sweet notes of apple pie dominating. Straight forward, simple ice cider - with a touch vanilla, apple and that of a lighter cider in the finish.

Bottle shared by James, poured a clearish golden shade with no head or lace. Note of apple sweetness, really rich and sugary with a cinnamon crust flavor. Also had notes of wood, and toffee as it warmed. Pretty nice cider if you ask me.

Tasted at the Green Market in Union Square. This is the first ice cider I have tasted and I was surprised that it wasn’t over the top sweet. Quite the contrary, it was very well balanced and slightly sweet. Very nice.

Sample from the farmer’s market. Bright, shiny gold pour. Aroma has cinnamon and butterscotch notes with apples. Flavor is mild of apple cinnamon cheerios, apple juice, and oak. Not as sticky sweet or boozy as other ice ciders but a pleasant cider overall.

Pouring at the Applepalooza event at the Astor Center. Pours a thick sticky golden amber. Sweet, sticky apples on the nose. Clean sweetness right away, vanilla and apple sugar. Caramel and pudding, lingering caramel notes.

Bottle poured at CiderDays 2011 - Ice Cider Tasting. Big woody, maple, earthy aroma, sweetened. A touch of caramel. Right up front a strong oxidized note that makes it seem like the flabbiest of sherries. Odd. That oxidation and an apparent lack of acidity really take the punch out of this ice cider. I can’t get into that almond/olive/salt note that comes with the oxidation and this just seems off.

Deep amber pour with a thin white head. The nose is chewy, sweet and intense. Bright sweetness with a bit of honey and a dull blunted sweetness as well. Soft almost caramelly character. It’s really missing the bright acidity that I associate with the best versions of ice cider. A lingering baked apple spiciness but seems quite lifeless. It’s not really bad, but it’s definitely one of the less intriguing ones I’ve even come across.
