A terrific saison-like Belgian blonde that has all the care and craft you expect from Sante Adairius - never mind Evil Twin was involved, nor that it was brewed at Westbrook in South Carolina. Musty aroma, a real deep malty tongue coating, and a bready, grape/herbal taste that’s both earthy and thick with flavor. Have a towel nearby, because this one is a fizzer. Pours a hazy, barely translucent honey golden with a thick and rather persistent eggshell head. Malty aroma has a strong fruity overtone that delivers notes of banana, pear and - mango? Papaya? Something tropical. Flavor has the same zingy fruit notes, plus the jazzy pepper tone that the recipe promises. The pepper is strong enough to notice, but does not overwhelm or dominate the palate. Pretty good stuff. Great appearance with a thick long lasting head and lots of lace. Aroma is mainly typical Belgian blonde with fresh hop and some of that pepper. Flavor’s a lot like nose, but not a lot of the Brett. Great drinking brew.

22 ounce bottle into tulip glass, no bottle dating. Pours lightly hazy/cloudy bright gold color with a 2 finger dense white head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with some light streaming carbonation. Aromas of big lemon, pear, banana, bubblegum, peppercorn, coriander, clove, herbal, floral, grass, wheat, bread, light funk, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/earthy yeast, spice, and pale malt notes; with good strength. Taste of big lemon, pear, banana, bubblegum, peppercorn, coriander, clove, herbal, floral, grass, wheat, bread, light funk, and yeast earthiness. Good amount of peppercorn/yeast spice on the finish; with lingering notes of lemon, pear, banana, bubblegum, peppercorn, coriander, clove, wheat, bread, herbal, grass, and yeast earthiness on the finish for a while. Very nice complexity and robustness of fruity/earthy yeast, spice, and pale malt flavors; with a great malt/yeast/spice balance and zero cloying flavors after the finish. Medium carbonation and body; with a very smooth, crisp, and slightly bready mouthfeel that is nice. Alcohol is well hidden with only a slight warming present after the finish. Overall this is a damn nice Belgian blonde style. All around good complexity and balance of fruity/earthy yeast, spice, and pale malt sweetness; and very smooth and crisp to drink for the ABV. UPDATED: JUL 22, 2014 Cheers to my buddy Joey, a generous guy, kind soul, and beer enthusiast. I did a double take and a WTF when I first saw this beer.
The beer is pale yellow, nearly clear, with just a slight haze. Effervescence rising rapidly from the depths of the snifter. Half inch of pure white head with soapy lacing in its wake.
The aroma offers Saaz hops, coriander, Belgian yeast, lemons, lemongrass, hay.
Lovely flavor. Mild citric tartness. Light fruity sweetness. Floral hops and a bouquet of grass, citrus, yeast, spice.
Moderate bitterness in the finish. Lemon rind with a touch of grapefruit. Medium to full bodied and somewhat palate coating.
Overall, solid. Complex and enjoyable. Nicely done.
