Bottle; Pour is murky brown with a fine bubbled khaki head into this glass. Its a one/two finger head and it does retain fairly well here. The nose is bready, roast, fruit esters, with a smokiness present here. The flavor profile is robust roast initial moving to cocoa, modest dark fruits, some minerals, and a touch of chalk. It lacks belgian elements you would want out of the style, with the malt side dominating. Pours black and opaque, with a very good head.
Flavor: very floral, a bit ’wild’, with Belgian yeast and light and medium roast malts. Medium+ strength. A bit sweet up front; clightly funky and slightly bitter aftertaste.

12 oz. bottle. Appearance: slight light brown head, deep copper to brown color, clear. Aroma: chocolate, cherry, light roasted malt,Palate: light body, lively carbonation, dry finish, light texture. Taste: medium sweetness, both of maltiness and of fruit, very light tartness, light-medium bitter finish. Overall, very unique, good balance too. P: Dark brown mahogany tinted cola appearance. A dainty layer of tan bubbly fast scattering head that recedes to a coral reef swirl on top.
S: Sweet hard candy and black malt. Smoked grains, burnt molasses, figs, hazelnut coffee, powdery earthy yeast pine and floral hops. Once warmed the aroma becomes similar to a grease trap at a fast food joint.
T/M: A cornucopia of earthy yeast, pine and floral hops flood the palate. A sensation of dust in my mouth. Lurking in the background rounding out the dryness are alcohol soaked figs, smoked grains and molasses with a bitter bite of coffee. The smoke really encompasses the back of the throat and surrounds the flavors slowly building it’s intensity to a profile similar to burnt marshmallows. Aggressive carbonation in a medium body. Finish is dry and smoky with subtle tart apple peel. The pine/floral hops are almost too much for this beer.

Dry, sour, and burnt malt flavors dominate. The bartender at bambinos in queen anne said this collaboration was not well received. I could see that...I would not describe this dry and dark beer as a saison.
