This beer is made in collaboration with Micah Melton The Aviary and is a modest attempt to imitate The ‘Blueberry’ cocktail as it is served in The Porthole at The Aviary, Chicago. The Porthole is an equally genius and gorgeous infusion vessel designed by Martin Kastner of Crucial Detail design studio. It can be used to create striking cocktails or any other type of infusion - maybe even beer.

Hazy amber/orange color; Medium slightly creamy body; Aroma of yeast, fruit/berries, floral, & some funk; Flavor of slight sweet malt, yeast, fruit/blueberries, citrus rind, some floral hops, and spice; Dry finish; Nicely balanced; Pretty good overall.

UPDATED: MAY 2, 2017 Bottle. Moderate grain for the malt, light orange for the hops, light dried leaves for the yeast, with fino sherry and candy sugar in the background. Head is small, wispy, slightly off-white, with slippery and good legs, and is mostly diminishing. Color is murky tan/orange. Flavor starts lightly to moderately sweet and moderately acidic, then finishes moderately sweet and lightly bitter. Palate is medium, slick, with a lively carbonation and a lightly astringent finish. A good, but sweeter than the usual Saison.
