COMMERCIAL DESCRIPTION
We took to the higher elevation of the Cascades and gathered enough fireweed to brew a full batch. We dried the leaves and flowers to use in this beer by steeping them at the end of the boil. We then cooled the wort and inoculated it with a blend of our mixed culture and Jester King’s house culture of native yeast and bacteria from the Texas Hill Country. Fair Voyage was fermented in stainless steel for about two months and then bottled in early January.

Fair Voyage is 100% naturally refermented in bottles and kegs, unfiltered, and unpasteurized. At the time of bottling, it was 1.002 specific gravity and 3.8 pH.

Bottle at Uncle Alberts, pours a cloudy yellow golden color with a nice looking white head. Notes are mostly lemon, oak, and other funky yeast. Some earth and flowers in the back end. Light to medium body. Pretty nice

Pours a lightly cloudy yellow with a white head. Aroma has big citrus and some brett and light peppers. Great aroma reminiscent of some SARA saisons. Taste is equally citrussy sour, wheats, grassy, leafy and light brett. Aftertaste is drying. Very good!

Bottle thanks to Chow. Pours a cloudy gold with medium white head that lasts. The aroma is strong floral, funky, straw. Medium body, lemon zest, funky, nice tartness, juicy, very nice.

Hazy yellow. Aroma bandaids, lemons saison DuPont. Old grassy euro hops. Tastes candied lemons grassy. Bone dry palate.Id drink stuff like this all the tome of I could afford it. Can’t wait for these guys to get going in earnest!

Jester King Brunch at Meddlesome Moth. Pours golden with slight head. Aroma of lemongrass and wheat bread. Wonderful acidity pairing terrifically with the ceviche. Appetizing sourness finishes soft and clean. Great beer.

Nice tart saison. Get a nice herbal character I assume is the fireweed. Very gentle light malt flavor. Kind of citrusy. It’s refreshing. Bubbly, but cloudy with no head. Color of lemon juice.

On draft at the source. Pours hazy yellow with a small blanket of white head that lasts. Scented dryer sheets, Meyer lemon,. Light mouthfeel. Good citrus

Draft at beer junction. Pours a slightly hazy medium gold with a dense and fizzy head that goes away. Bright tangy grassy nose, some lemon and lemongrass. Creamy medium body with lively carb. Lightly sweetened cereal under a bunch of lemon, mineral, grass, and hay. Beautifully balanced and layered. An auspicious beginning to say the least.

Chuck’s 85th, Seattle. Draft at Fair Isle release. Soft white head, hazy bright yellow body. Lovely bright aroma, lemon and light Brett tartness. Clean, tasty and enjoyable body. A subtle light palate, nicely put together. Lemon tartness over top. A firmer malt grain buried somewhere deep. Very nice.
