Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Big thanks to jdubfl for sharing this one. Pours hazy yellow with a white head. Nose is lactic, acid, malt, citrus, flowers, herbs, tartness, astringency, and a hint of earthy meadow. Flavor is about the same with plant and meadow notes in all of the sour flavor. Excellent beer with acidic qualities blending into a unique saison.

Birra dal colore ambrato tendente all’arancio. Schiuma bianca, generosa, a grama mesia e mediamente persistente. Gli aromi sono rustici, lievemente funky: ciliegia, mela, cuoio, rabarbaro e zenzero. In bocca l’attacco è con un accenno di malto e caramello per poi volgere verso una leggera punta acida ed un finale secco con una punta di amaro erbaceo.

Bottle. Hazy orange color with big eggshell head. Aroma is flowery, dough, citrusy, spicy yeasts. Taste is dough, flowery, apples, citrus peel, peppery yeasts, herbal. Medium carbonation, silky mouthfeel. Quite a bitter finish. Very interesting - not sure if it’s great, bit certainly well-made!

Vivid copper pour, small ring to white head. Aroma of white wine green apple, citrus, cellar. Lightly spicy up front, apple, citrus rinds, unoaked white wine, malt, caramel, grass, Dandelion. Lighter body, moderate carbonation.

Pour is a murky brown with a small white head. Aroma is quite vinuos, some candi covered dark fruit but also quite musty and dusty. Flavor is a nice citrus acid followed by caramel malt and a balsamic vinegar bite. A fruity sweet tartness is left on the tongue as this goes down. I have never ate a dandelion so I’m not sure what they bring to the beer. A unique but very tasty take on a saison.

Medium aroma of malts, caramel, fruit, grain, Saison yeast, hops and citrus.

Opaque golden/amber beer with a slight off-white head.

Starts medium sweet with malts, caramel and fruit; ends slightly bitter and dry with grain, Saison yeast, hops and citrus.

This beer is rather intense, complex and balanced. Amazing unfiltered appearance and this also makes the palate great. The aroma could have been stronger and the flavour is great, but still feels like it misses something.

very hazy orange to amber colour, one inch creamy yellowish head; aroma of orange zest, lemon juice, apricot, earthy, linden honey and barnyard notes, as well as bread; taste of overripe apricot, linden honey, some lemony and earthy notes and even some hoppy bitterness and spicy alcohol in the aftertaste; great saison!

0,3l on tap @ One Pint Pub. Pours hazy amber with a medium creamy head. Aroma is earthy malts with some cucumber and a hint of dandelion. Flavor is earthy malts, a hint of yeast, some dandelion and hops. Great saison as usual from these guys.
