It's been a bit since I had this beer, but the thing that struck me most was a slightly pepper quality about the palate. Not peppery in a hop way, or even as an assertive note, but a kind of very subtle echo I sensed on the edges of my tongue. The saison wasn't the best I'd tried, but that was a wholly unique quality for me to find in a beer. Fortunately, it was at a tasting and I was able to learn what it was. Care to guess? Of course--pepper. Quite an eye-opener.

Bouteille. Robe dorée à teintes orangées, légèrement trouble et surmontée d'un col de mousse blanc et rocailleux. Arômes de levures belges, quelques petites épices sucrées, pain au citron, traces de sirop de poire et miel, herbes fraîches. En bouche, malt à la fois citronné et sucré, fruits du verger, levures soyeuses rappellant une préparation à pain épicé, petit côté pulpe d'orange qui nous amène vers une finale plus épicée et mielleuse où l'aspect saisonnier ressort plus. Barr, Copenhagen - (Thanks to our barman given freely) pours golden orange with a white head. Tart fruity and floral notes, citrus fruiity, yeasty, medium body, floral light grassy and fruity into the finish.
Bought @ Bierhalle Deconcinck Vichte.
Very fruity palate. The appearance is a firm whiter than white head. The aroma is fruity and herbal. A tad citric with spicy side. The taste is so rich and light at the same time. The palate is smooth and juicy.

Fantome has the recognizable golden, heady beauty and technical grace of other Farmhouse in its homeland, yet this Saison distinguishes itself with its crisp and brightly acidic fruit character. On the nose there's champagne-like esters with floral and earthy character. Cohesive yet complex flavor profile. Lemon, grassy grains, white pepper, clove, and very subtle tangy orange.
