3.7 AROMA 7/10 APPEARANCE 4/5 TASTE 7/10 PALATE 4/5 OVERALL 15/20
Thanks to bu11zeye for sharing this bottle. Yellow with a white head. Aroma is full of lemons, yeast and biscuit malt. Flavor is very similar. The biscuit and toffee malt character comes through, but it is complimented by some lemon and other citrus character. I also get a bit of grass and some Belgian yeast character. Medium mouthfeel and medium carbonation.
Backlog from our Fantome tasting in DC earlier this year. Believe this bottle was provided by Brad. Thanks Brad! I noted that this had good acidity with a fair amount of blood orange and other citrus notes, good minerality, and great balance. Unfortunately, didn’t have much else in terms of notes. Doesn’t really stick out in my mind thinking back on it now, was definitely struggling through these last Sante. gyllenbock (9328) - Stockholm, SWEDEN - JAN 3, 2015
Bottle from Etre Gourmet, bought a couple of years ago.
Almost clear golden/orange with small brief white head. Aroma of funk, citrus, apples, some "candy" and light spices. Similar taste. The body was medium and the finish on the dry side. Still a drinkable one. Ernesto987 (6050) - Arizona, USA - AUG 13, 2013
bottle shared at HF, a milder fantome, light malts, not very funky, these are definetly at mixed bag and this one landed light. SrSilliGose (3331) - pouring bus, New Brunswick, CANADA - AUG 12, 2013
Bottle offered. (1). Herbal twang backed by a rustic sourdough bread. Hint of slightly sweet doughy pine. Some bubblegum. Weird. Okay. Errl (2442) - Plano, Texas, USA - AUG 6, 2013

75cl bottle. Cork opens with a loud pop but not a gusher thankfully. It pours deep golden / orange with a large fizzy white head that dissipates immediately. The beer in the bottle is completely spritzy and carbonation is aggressive, meaning there’s no way to escape yeast in the glass. Aroma is sour acid and dusty, with notes of white wine, wet wood and basement. Quasi-lambic. Taste is similarly acidic an funky, with barn and hay notes. Lightly zesty and grapefruity. Sparkling carbonated with medium to light body. Overall an extremely drinkable and tasty beer, I loved it. Looking at the list of ingredients, it doesn’t sound like Dany has exactly this outcome in mind, but the results are equally great. bu11zeye (13029) - Frisco (Dallas), Texas, USA - JUN 3, 2013
(750ml bottle) Pours a hazy golden body with a small white head. Aroma of leather, florals, coriander, caramel, and wet weathered leather. Flavor of light tangy citrus, coriander, grass, florals, earthiness, white pepper, and some brett. DavoleBomb (1867) - Pennsylvania, USA - MAY 25, 2013
Poured into a tulip. From 2011.
2.5 A: Moderately hazed light orange color. Two fingers of fizzy white head that fizzes away quickly and leaves no lacing.
4.5 S: Like Sante 12 and 13, this has notes of lime and pithy rind, which I really enjoy. Like 12, this has a lime margarita vibe - a strong one. Aside from that, there’s lemon, apple, and plenty of funk and floral. Outdoorzy funk featuring wildflowers and apple orchard. Herbal floweriness if that makes sense. Jasmine and lilac. Some hints of wet, rotting wood and forest after a rain. All in all, this smells fucking great.
4.0 T: Lemon and lime lead the taste with apple fruitiness secondary. Again there is a strong lime margarita vibe, but this vintage leans more toward beer than 12 did. Hay and grassiness. Apple orchard and woody funk. A touch of basement must. Moderately tart, just enough to give a light pucker. Not as flowery or as herbal as the nose, but this there underneath. Quite tasty.
4.0 M: Lighter medium body. Light, spritzy carbonation. Incredibly smooth without really being crisp or creamy. Somewhere in the middle I guess.
4.5 D: Another fantastic beer from Fantome. They truly are the masters of the style. No faults other than the head retention and more than solid everywhere else.

(750ml bottle thanks to bu11zeye) clearish medium gold, no head. Nose of sawdust, bit funky, sour cherry. Taste of cherry, bit of gold raisin, lightly tart, refreshing, wine barrel/vinous, really like this. Great linger, perfectly balanced with tartness.
