UPDATED: JUL 16, 2008 750 ml bottle from the Beverage Warehouse in Winooski, VT, served from a standard no-name wine glass at a bit below cellar temperature. Light "pop" of the cork, a bit of fizziness that quickly subsides in the golden/straw body which is just faintly hazy and bubbly....earthy, mineralic/chalky hints in the autumnal-sweet cider-apple nose, old Russets with hints of Empire perhaps....very smooth, eminently quaffable body, just beautifully balanced on the dry/sweet chart, with very little alcohol noticeable and a lovely hint of caramel sweetness at the finish...low to moderate carbonation, a real pleasure to drink with just enough complexity to retain interest through the bottle, enough easy roughness to make you enjoy that finish. Possibly the best from this solid cidery.

Refrigerated 75 cl brown bottle poured into a white wine glass. Pours clear pale yellow and small white head which dissipates fast. Bottle at cider dinner at jimmys 43. Nice pour with light nose of apple skin and champagne. Fruit forward with a bit of residual sugar. Some bitterness and white wine flavors. good apple aroma, a bit vinous, effervescent. clear, pale yellow color. tart and carbonated. clean, sharp, crisp. refreshing. not overly tannic, good acidity. dry and light.

Bottle @ home. Filtered, clear, golden orange appearance with no head. Slightly toasty, apple pulpy, mildly dry, vinous aroma. Lightly sour, sweet, toasty apple flavor with a mild to moderately finish. Slightly vinous. Kind of a weird toasty flavor.
