Sweet honey wine  -  Ecocert Canada certified organic product – 14% abv. Cuvée de la Diable is a top-of-the-line honey wine crafted the traditional way at the base of Montagne de la Diable and aged in oak casks for three years. The nobility of this nature protected site has inspired the Desrochers family to create a unique product where balance and elegance are revealed by managed oxygenation in oak casks.

Blond color, hazy. Simple profile, fruity, honeycomb. Sweet flavor, good body, light fruity character, wax, with light astringency in the end.

375nL bottle, pours a clear pale yellow. Aroma brings out complex treacle and wild honey nectar. Flavour is along the same line, with a lovely wildflower honey quality upfront, followed by honey nectar, and phenols. Nice warming effect. Excellent.

2009-02-19. Crisp yellow body, headless, with some legs on the glass. (3+) Sweetly alcoholic aroma, ephemeral floral notes, light wood notes. Flavour is sweet up front with a dry middle, notes of wood and a sake like hotness that is a bit much but the sweetness returns throughout in varying capacities. Smooth medium palate. Glass at Dieu du Ciel. Pours a clear orange gold with a touch of ruby to it. Vinuous, soft honey and spice. Toffee, big and sweet. Tastes like the honey syrup you get on baklava. Long and sweet, caramel and honey. Soft sweet honey. All meads should be required to be at least this good.

Clear pale golden color, no head. Leaves an oily residue on the side of the glass, though no clear legs. Sweet, honey, almonds, alcohol scent. Honey, sort of tart taste. Warming alcohol. Honey (light), herbal, nutty aftertaste. Medium, a bit oily mouthfeel. Tart finish. Hints of raisin and toast.

Trickling honey wealth along sturdy wooden boards...A classy, liquorous mouthfeel alas falls into a short flavor with alcohol heat...Intricate legs decorate the glass for this somewhat faded version of an apparently more potent mead...Not as good as the straw wine which preceded...

sample from mathieuc, thanks bro! pours clear bright gold with some textured legs. pure clover honey - clean and genuine; sweet pears and other orchard fruitiness, flowers, booze, wax, hint of coconut and vanilla - shy barreling components - yet present and giving way to honey to express itself freely. flat carbonation, medium body - oily; warming and semi-sweet floral finish. o-k.

[2005-20090219] 375mL bottle. Sweet potato spicy yeast aroma with mild sweaty skin notes. Clear, pale yellow body with no head and thick legs. Mild potato wood cask flavour with mild ’sake’ characteristics and a long sweet finish. Light-medium body. Not super fussed about it, it kind of reminds me of bodily fluids.
