COMMERCIAL DESCRIPTION
Classics are called "classics" for a reason, and rarely are they reinvented without being butchered. Calypso Farmhouse Ale is our quest to slightly tweak a classic Saison to take on a slightly new-world flavor profile. Brewed with a respectable amount of corn, we were able to achieve the style’s trademark dryness but also accentuate the fruity notes from all of the Calypso hops we threw at it. Hop flavor is balanced and not threatening to the palate, stirring up a complex profile consisting of fresh picked pears, hay, and guava, with a delightful finish reminiscent of lemon verbana. Calypso Farmhouse Ale is brewed with the focus of execution and not exuberance, a beer brewed with equal parts respect for its elders as admiration. We hope we did our favorite style of beer justice and you all enjoy it.

On tap @ Fieldwork. Clear yellow beer with some white foam. Nice enough malt profile on this one. Fresh French bread, some cracker, and a bit of yeasty dough. Has a peppery and grassy quality to it, so sort of Dupont-esque in that way. Definitely lemon, or at least tart fruits. Finishes much more bitter than I would expect or care for. It's okay, but could use some tweaks to be really nice.

Very pale yellow. Very clean lemon, wheat. Tea like quality. Very clean fermentation, zesty. Like farmy only. Nice, very modern and dry. (Taster at the brewpub in Berkeley)

Draft. During my bachelor party long weekend in the san francisco area, fifth stop Fieldwork. Light golden pour with some head. Yeast, spice, fruit, floral tones.

[1/26/17] Draught at Fieldwork Brewing in Berkeley. Clear yellow. Fruity, spicy, yeasty and floral aroma. Flavor is quite dry, fruity, spicy, floral.

On tap at Fieldwork. It pours mostly clear yellow color with a white head. The aroma is grainy with baked bread, light spice and hints of citrus. The flavor is grainy with a little pepper and a lot of citrus. It has a solid peppery/earthy bitter finish. Subtle acidity. Ok.
