Light golden yellow with tiny bubbles but mostly sedate. Apple essence in the aroma with a distinct subtle note of cheesy funk. Tart up front with a pleasant goaty finish. Drinkable yet complex. Agree with the last reviewer that this is the gueuze of ciders.

Nose is sulphuric and funky. Poopy almost like a fart, earthy and leafy with notes of underlying tart apple cider notes. Pours bright golden with a soft bubbly layer on top that disappears rather quickly. 750ml capped. Pours a light/pale slightly hazed yellow with a huge white head. Nose is very dry, tart green apple, a touch white wine like. Very light body with tons of effervescent carbonation...crisp. Dry woody, hay and green apple up front, white dry wine notes mid palate finishing up with light and clean tart green apples and white grape. I wish I would have had paired this with some cheese. Well made stuff, but a little dry for my current cider tastes.

750, capped. Massive gusher. Tons of bursting carbonation all over the bottle and the counter as soon as the cap leaves the mouth. So, after a few minutes spent cleaning up, here we are. Cloudy and very pale gold with tons of nucleation columns, most of the bubbles springing skyward like shot from sort of apple cannon. Loose white fizz splotched here and there on top of the whole thing, replenished by the rising bubbles. Big dry green apple nose with some apple skin thrown in. Maybe the faintest whiff of dusty horse blanket. Fizzy light refreshing body, very appealing. Rustic and brassy carbonation, almost soda-like. A picnic cider. Green apples and a bit of white grape on the mid palate, plus dusty horse blanket in tiny quantities. Nice cottony green apple finish. Pleasant and refreshing.
