COMMERCIAL DESCRIPTION
Another offering from our "Bones" series, featuring the fermentation of fresh fruit. In this instance, California white peaches from Sanger, CA are fermented with a brett’d Saison that has been maturing four months in French oak barrels. The synergy between fresh peach, wild microflora, and oak components create a bright white peach flavor mingling with spicy yeast and oak aromas. Soft acidity and a firm carbonation lend "pop" to the overall sensory experience. It took four separate fermentations to create this concoction. Sante!

The lighter (in color and overall) in a head to head with Feral Peach. Less Fruit, and less sour....more yeast centric with light wood and light to moderate peach showing. Nice.

poor result in the pach off, very tart, tons of vinegar. Moderate peach flavor, then a strong tartness takes over. Too bad, firestone usually crushes it.

Pours a clear golden with no head except for a rachitic white rim that leaves no lacing. Nose is of apricots or maybe fuzzy peaches with wood and some carbonic acid. Taste is gently tart and winey with more peaches. Really, really dry. Good oak level, never too much. Medium body, medium carbonation. Vinous it goes without saying. A nice peachy sour, I would certainly drink that again if I could just go to the store and pick it up!

Bottle (375 ml). Clear bright golden with a small white head leaving little lacing. Aroma is very nicely fruity (peaches) with oak, lovely funk, mild spiciness and brettanomyces. Taste is of peaches, low/gentle tartness, mild funk, grassy notes, brettanomyces and oak. Medium body. Soft carbonation. Ample mouthfeel, but also a bit oily. Peaches finish. Another lovely and well balanced sour from FW. Not acetic at all. Perfect tartness level and the peaches comes out nicely.
