COMMERCIAL DESCRIPTION
Our first foray into the funky world of lambic style beers. These traditional Belgian style ales are exposed to both wild yeast and bacteria, as well as the addition of fruit, during the secondary fermentation. Ours began back in 2010, with the blend of two wheat ales and inoculated with Brettanomyces Lambicus, Brettanomyces Bruxellensis and lactobacillus. We then added ollalieberries—no, that’s not a typo—and waited patiently for two years! The result is amazing: a distinctively, dry, cidery, fruity, vinuous and oh-so sour beer. Bracing and refreshing.

On tap at Pagaea. Pours reddish brown with an attractive beige head and a sour berry aroma. There is a hearty fruit flavor with a sour brett influence and a woody finish. Refreshing and tasty.

At Beaverex. Pours clear deep violet-burgundy with a medium white head which recedes to a foamy layer. Aroma is raspberry and blueberry. Taste is tart red berry, med-high acidity, lemon tart.

Backlog. Slightly unclear dark red with a faint beige head. Oaky and fruity with deep notes of blackberry, funk. leather. Tart, vinous. Light body and highly drinkable.

On tap at prefunk Boise. Pours out a pink purple almost with a small head. Nose is sour tart berries some barrel and bugs. Taste is more of the sour bug kick with a nice end.

Reddish purple colour. Not much head. Currants and blackberries and quite tart. Medium acidity. Lots of fruit. Aside from the acidity, the base beer is fairly innocuous.
