We’ve patiently waited for two years to offer you this exquisite ale! Sour Opal retraces its roots to the lambic cellars of the town of Brussels and the Senne River valley, in Belgium. This American “Gueuze” represents a spectrum of flavors from a traditional barrel aged sour ale, complete with aromas of aged cheese and a distinct earthy mustiness that can only be found in a well cellared barrel aged sour. The complexity and balanced flavors of Sour Opal can be attributed first to the crisp assertive tannic acidity of the Viognier barrels. Oak-derived flavors and aromas mingle with guava, passion fruit, pineapple and tart cherry notes. This beer rounds out with a crisp clean and quenching acidity as well as a mild grape fruitiness that is intensified by a higher carbonation level.

375ml corked bottle, 2017 vintage. Tart tropical fruit aroma of pineapple and passion fruit as well as notes of vanilla, oak, coconut and citrus. Pours cloudy golden orange colored with half a finger of off white head that has excellent retention and lacing. Starts with tart pineapple, passion fruit and citrus flavors as well as a lively mouthfeel. Finishes dry and smooth with vanilla, oak and coconut flavors melding nicely with the citrus mic acidity. Really well-made Sour.

330 cL cc from Smith's. Pours clear gold with white head and fizzy body. Nose is tart cherry, pineapple, white grapes. Tastes champagney, with notes of white grapes, oak, cherry, and some dank mustiness. Great beer.

UPDATED: JAN 3, 2018 On tap at Harry’s Hofbrau in Redwood City, CA. Aroma is mild funk, must, under ripe stone fruit, white wine. Taste is tart, astringent, chalky must, light unripe peaches. Some nice funk as it warms but a little one dimensional (sour).

375ml bottle pours a clear gold with some frothy, white head. Nose has sour fruits, stone fruits too, white plums. Flavor follows, nectarine, white plum, light vinegar. Tart finish, but fairly smooth.

Pours clear gold into a tulip. White head with medium retention recedes to skim surface. Sour tropical fruit aromas. Soft with tart pineapple and cherry upfront turning to mild marshmallow in the medium length finish.

Bottle. Pours hazy copper with a medium lasting white head. Aroma is nice and goodie-like, tart and funky, pineapple, white wine, cherry, oak. The flavor is nice and tart but lacks a bit of depth. Fruity, slightly tannic. Medium body, crisp, somewhat lively feel. Nice overall, but falls just a bit short of being really good.

2017 edition, on tap at side project cellar. Pours a slightly hazy pale yellow with bubbly white head that leaves light lace. Aroma of strong barnyard funk notes over a clean lactic acidity and light lemony citrus notes. Taste is less funk, more acidity, less fruit, gets a little off here. Great at first, got tougher the more I drank, but still pretty awesome.

375ml bottle at Kump's during non-Belgian lambics tasting. Batch #1, 2015. Pours a hazy golden with a weak white head. Aroma is funky and slightly fruity. Similar taste. Moderate acidity. Quite good.
