COMMERCIAL DESCRIPTION
This is our Velvet Merlin Oatmeal Stout aged in Bourbon Barrels and it just won the 2010 and 2011 Gold medal at the GABF for barrel aged beers!!! This beer goes into the barrels as a roasty dark chocolate, coffee accented mild mannered stout and comes out transformed as a milk chocolate, smooth dark cherry, vanilla and coconut infused masterpiece. We are incredibly proud of this beer and it seems as though it was always meant to be a barrel aged brew. 100% Oak Barrel Aged

UPDATED: FEB 5, 2014 2013 vintage, poured into oversized wine glass. Nice head on this one, more black than brown. Not much of an aroma - what’s there is almost off putting. Creamy taste but very little coffee and bourbon presence. I do get the chocolate and vanilla. Body is lighter than I expected and wish it was a little thicker. Overall, I expected more from this one but still a tasty offering.

Nice bourbon nose, woood, roasty, caramel. Pours dark copper with nice tan head. Slick texture, light body for the stated ABV, tasty, tatse follow the nose, little creamy, smooth. Enjoyable.

Color negro con una pequeña corona de espuma beige, aromas tostados con ligeras notas a cafe, el sabor es tostado con un cuerpo sedoso.

Aromas y sabores intensos maltas tostadas con grandes dosis de licores bourbon y buena sensación alcohólica desde el principio. Algunos cacaos y maltas tostadas torrefactos que acaban dejando suave amargo algo seco también tostado. Cuerpo medio a intenso bastante líquido con buena sensación alcohólica. Grandes recuerdos y notas de bourbon. Bastante buena para repetir sin duda alguna.

Dark, inky black, undetermined clarity with a small beige head showing no retention.
Tons of oatmeal-like cereal character in the nose alongside light bourbon, spice and of course, chocolate. But it’s not fudgey or intensely sweet (not even that sweet, at all) and the roast is restrained providing no ash or heavy char even. Vanilla, light soy and even lighter marshmallow is noted with cherry, plum, raisin and fig as it warms and breathes. Pretty tame, well-aged and cared-for beer without any of the excess that you often see in bigger, oak-aged beers of this style. No alcohol or flaw.
Surprisingly quite dry, with a massively chewy, oatmeal-like texture that provides a soft, comforting feel without all of the requisite sugar that usually comes with it. Milk chocolate, cherry, vanilla and mild, fruity roast all come through the middle, with low but engaging carbonation and spicy bourbon accents along the way. Soft, chocolate and oat finish with fruit and spice lingering gently. Very nice! Hard to imagine this comes from the same brewery as Parabola.

Tap at Tap House - Des Plaines. Deep brown with a thin tan ring. Dark chocolate, espresso, grapefruit and wood aromas. Fruity, dark chocolate restrained sweet flavor. Medium body with a soft feel.

Dark brown in color with a light tan head of foam. Light, smooth, and friendly bourbon character comprised of vanilla, sweet caramel, milk chocolate, and a slight dark fruit presence. Very smooth oatmeal malt makes this so decadent to sip on.

Deep brown color. Big vanilla oak, bourbon, sweet nose with a bit of chocolate. Lovely semi sweet mouth with bourbon, chocolate cake, oak. A bit thin body, warming bourbony finish. Nice stuff.

UPDATED: MAY 28, 2017 Poured from bottle 2015 vintage Rate 1500 nice light chocolate color with a creamy mocha head. Aromas of oats chocolate coffee vanilla mild roasted malt. Taste is rich creamy perfectly balanced notes of chocolate coffee vanilla. Wow I could drink this every day.

(On tap @ CBC 2016 Red Session, Copenhagen) Pours dark brown to black with a tan head. Aroma of chocolate, coffee, vanilla, moderately roasted malt, a little wood, quite some barrel character, sweet and creamy. Fairly sweet flavour as well, chocolate, toffee, sweet black coffee, vanilla, wood, slightly burnt, light bourbon, a bit creamy, hints of the oatmeal body, a little hint of booze. Finish has roasted malts, coffee, wood, semi-sweet chocolate, oatmeal, quite persistent. Medium bodied, oily and creamy, with soft carbonation. Does a good job drinking like it’s got a higher ABV, would be very easy to sip all evening.

Negra turva, espuma marrom de média formação e persistencia. Bastante café e em segundo plano chocolate. Paladar de médio dulçor e leve amargor torrado. Corpo cremoso e média carbonatação. Final de base maltada, cereais que dão uma encorpada prazerosa, chocolate e amadeirado ficam mais intensos deixando o café em segundo plano.
