Draft on tap at the brewpub (Flossmoor, IL). A delightful new sour offering (and recent stuff has been pretty fun). Pours a nice gently hazed golden amber hue, a touch darker in the middle but some striking glow throughout. Deadened offwhite head dies to a film and laces small. Aromas give a distinct pineapple brett, gentle yogurty tartness on the nose. Kiss of lemon, some dry citrusy and floral hops remain. Some dough, gentle fruit from the Belgian yeast, crisp cereal and bready malts mix with a soft oak quality. Initial is lighter end of medium in body, putting pineapple, gentle bready malts, a good oaky tannic jolt into the equation. Some mellow tartness jumps in but more bretty and dry on my palate. Touches of dry florals and citrusy hops give some life, gentle bready malts, doughy into the middle. Oak, dry, tannic into the backend with a mellow hop presence clinging on. Tart and yogurty lactic elements give some life but again, more bretty for me overall. It’s a fun beer, works well for my palate with some mellow tartness, bigger brett. The lingering elements from the base offering are pleasant and give some nice complexity. Solid.
