In the fall of 2008, "The Three" (Todd Ashman, Matt Van Wyk, Zac Treimert) joined forced to brew Collaborative Evil. This dark, delicious creation with spices and exotic sugars could only be made better with time - time in an oak barrel. Here at Flossmoor, thats exactly what Matt did. Since hes now brewing in Oregon, this is my tribute to Matt, my standing Ovation to his years at Flossmoor. Cheers! Bryan Shimkos

Bottled. A dark amber beer with a lazing tan head. The aroma has notes of malt and caramel. The flavor is sweet with notes of fruits, malt, and a lemony acidicy, leading to a tart finish.

Pour is dark brown with a small off-white head. Aroma and flavor of sour fruit, vanilla, figs, plums, nutmeg, bourbon barrel, raisins, and molasses. Finish is tart and hot.

Bottle: Poured a dark brown color ale with a medium size foamy head with good retention and some lacing. Aroma consists of dry fruits (figs and plums) with loads of residual sugars and strong caramelized malt. Taste is also dominated by loads of dry fruits with an overabundance of residual sugars and some caramelized malt with weird grainy finish. Body is about average for style with good carbonation and light alcohol notes are perceptible. No balanced whatsoever in this beer and a total mess I had to drain pour most of this bottle.

Bottle thanks to Adam. Pours a deep brown with a purple haze and a tan head that dissipates to the edges. Aroma has a good amount of raisin with a hint of sour red fruit with a dark grain back bone. Flavor starts with raisin and dark grains with a hint of barrel and a tart finish.

Thanks to Adam for the bomber! Poured cloudy medium-deep brown with a short-lived, kinda fizzy beige head. The aroma picked up grape juice, honey, molasses, and a whole heap of figs, with tangy oak also quite present.. strong, and it smelled like it was going to be a bit sour. The flavor opened with sour oak, tart vinous character, and some sort of dark, Christmas-y spice that I enjoyed, but couldnt place.. sweet raisins, figs, and molasses again at the core, cut by oak and grape skins.. finished with more of the tart stuff, dark spices, and alcohol warmth.. tasty stuff. Medium-plus bodied and slick through the palate.. lower carbonation.. this was most definitely a big beer, but most of the components worked well together.

ChrisOs Early December Tasting. Cloudy brown beer. Tiny pale tan head. Light and slightly dry palate. A little crisp. Tangy tart dried fruits with raison dominating. Mild dark chocolate malt character. Semi dry finish with a little alcohol aniseed. Tasty an intriguing beer, unusual.

Clear dark brown colour with a small to average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate to heavy malty, toasted, caramel, spicy, dark mint, oak, dried fruit. Flavour is moderate to heavy sweet, light to moderate acidic and moderate to heavy bitter with a long duration, raisin, mint - menthol. Body is medium, texture is oily, carbonation is soft.
