COMMERCIAL DESCRIPTION
Big malty flavors, including licorice and chocolate, are balanced with a moderate hop profile. Brewed with copious amounts of prized malts and flaked oats, the Barley Wine is so strong that it has to be aged for several months before we can bottle it. Like a fine wine, it will continue to improve with age up to 2 years after bottling (If kept cool).

Labeled 2006B. Aroma of malt and chocolate - I think there really was a light wiff of licorice when the cap came off. No head. Brownish color. Starts dried plum and raisin. Its malty sweetish, and has a firm mouthfeel. Hop is very light. The alcohol warms the palate, and the throat, and below. As it warms, there does seem to be pear, probably not apple. The mouth sensations do seem to turn a bit unpleasant, if one quits sipping. Sort of like heated banana. This is pretty complex.

Very dark brown with a red hue, big and creamy beige head. Aroma of malt and bread, with port and dried fruits. A true barley wine aroma, but a bit simple. Really malty dominated flavour, with lots of sweetness and complex notes of the high alcohol content. After a while, the malt sweetness gets a little cloying like a bad doppelbock. If we had geographically divided sub-styles, I would count this as an English, not an American barleywine.

Grassy hops with hints of butter and nutmeg in the aroma. Malty, somewhat buttery flavor, dry and alcoholic, with brandy notes and grassy hops, especially in the aftertaste. Not too bad, but a bit too alcoholic to be well balanced.
