COMMERCIAL DESCRIPTION
This saison is brewed with a significant amount of local alfalfa honey, producing delicate floral notes, a soft honey sweetness and a dry finish. A short time aging in oak wine barrels adds layers of complexity. 100% brettanomyces fermentation.

Editor’s Note: Bottled versions of this beer as well as draft version at GABF were barrel aged. Recent 2014 kegs at the brewery are not barrel aged.

Bottle thanks to BenH! Pours cloudy golden with minimal white head which soon recedes. Aroma is pepper and citrus rind. Taste is pepper spice, citrus sweet, citrus sour, green apples.

Bottle - Pour is murky gold - there’s a feint white ring in this glass - it retains poorly. The nose reveals lemon rind and floral notes, with honeycrisp sweetness rounding things out. The flavor profile is the highlight here - it begins with a lemongrass funk, but this is a palate adjuster initially - for sure. A few sips in and you’re adjusted properly to the tartness of this one. It’s soft, floral, light honey notes - moving forward to more lemon tart. It moves forward to white wine and a dry finish line. The brett is light here, and there is some feint lactic - Anyway - this was a nice experience.

500 ml bottle at Gueuze tasting 2016, Ulfborg. Unclear yellow color with almost no head. Malty, hoppy and yeasty aroma, floral, citrusy fruity, funky, light vinous, wood, spicy. Sweet and acidic taste like aroma. Light to medium oily body with soft carbonation.

Unclear - hazy matt medium yellow color with a small, fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, pale malt, minerals, celery, herbs, light sweet honey - flowers - honey. Flavor is moderate sweet and light acidic with a long duration, dry, funky, minerals, yeast, floral. Body is medium, texture is oily to watery, carbonation is soft. [20160624]

From Bottle @fonefan gueuze tasting Ulfborg, thanks to Klimaet - june 24th 2016. Pours a murky yellow with a small white head. Aroma has lots of spices, corianders, herbs, funk, floral, light honey or honey dew. Taste is rather tart, again herbal spicy, subtle wheaty sweetness, light bitter finish. High carbonation and a rather light body.
