Bottle split with callmemickey, yourefragile, raveskdr, and Amyliz4 yesterday at Forest & Main on the day of the release. Served in a goblet.
Pours a fairly-hazy yellow straw color. Nice fluffy white head as it is poured. Good retention and nice lacing along the sides of the glass as it goes down. Thin cap throughout.
The nose carries a lot of bread and quick-rising yeast. Murky appearance along with this seems like it needs a bit more time in the bottle to develop. Underneath these notes are some notes from the underlying Solaire base, with light lemon and a bit of peppery yeast and spice.
Flavor is similar, but a bit less yeast. Some underlying earthiness and Brett funk. Touch of citrus and a light graininess. Still a bit of bread and bread yeast.
Body is medium with good carbonation. A bit thick right now. Again, probably the yeast not being quite ready.
Overall, I could see this ending up nice, but I think it needs some additional time in the bottle to settle. Probably won’t be all that long before bread yeast character falls through, and then I could see the Brett taking this one in a nice direction.

A: Very lively. Caution when opening, wants to jump right out of the neck. Slow pour results in about a six-finger, fluffy, downy-white head. Carbonation is crazy. Chardonay color, slightly more golden, and crazy bubbles. Impressive lacing for the style.
S: Apple, pear, wood, and funk.
T: Pepper and pear followed by lemon and juicy citrus.
M: Light to medium body, a tad creamy for the style, pleasant level of fizz.

On tap at the Modern Times Festival of Funk. It pours a light hazy orange color. The aroma is bready with some light funk and herbals. The flavor is full with spicy brett funk. Pours light orange with a foamy two finger head with excellent lacing. Aroma is of ripe fruits, lavender, sourdough bread, grass, candi belgian yeast, some wet hay, earthiness, sour fruits, light vinager, light barnyard, and floral hops. Taste is pretty similar to the aroma. Has a medium body with a semi creamy mouthfeel and a dry, sweet and sour, medium-long finish. Overall, a tasty, pretty complex saison that smells and tastes like spring.
