What could make our Cavatica Stout even better? Bourbon! We let our house stout sit in Four Roses Bourbon Barrels for several months. There in the dark, bourbon-enriched barrels, the beer soaked up as much bourbon quality as it could before we sent it off to the bright tank. With an up-front bourbon taste backed by our dark, malty stout, the Bourbon Barrel Cavatica is a deliciously potent brew that demands a taste.

On draught at Roscoe’s, aged in Maker’s barrels. Love this stout even more with the added kick of barrel aging.

Bomber, 2014 vintage, thanks Craig! Rich roasted malt aroma with notes of dark chocolate, licorice, vanilla, bourbon and oak. Pours black with a decent mocha brown head that has excellent retention and lacing. Starts with rich roasted malt, dark chocolate and licorice to go with a nice, full body and slick, viscous mouthfeel. Finishes smooth and a bit dry with bourbon, vanilla and oak flavors with the rich roasted malt taking over again at the end. Excellent imperial stout.

Bottle... Pours clear and black with flickers of crimson and a small, creamy, mushroom-colored head. The aroma features piles of raw oak, Tennessee whiskey and a dab of toasted coconut. Medium to full-bodied with airy carbonation. The flavor is lightly roasty with tannic and lightly acrid notes of whiskey and white oak. Smooth finish. Toasty and mellow - not boozy or hot. Was a gift from my son Orion 9/15, saved for this new year. so smooth. sweet dark aroma--brown sugar, alcohol, chocolate. pours viscous. looks threatening. so nice and physical on the palate. flavors of chocolate, espresso, toffee, oak & alcohol. finish on the sweet side with much alcohol warming

[24/12/2015] Happy Valley Supermarket, Portland OR. Darkest black with mocha head. Nose is toasty, bourbon for sure, chocolate and coffee. Dark fruits. Taste is malts, bourbon again, sweet. Pretty good. Creamy texture.

Bottle shared at THT. Near black with a tan head. Aroma of big bourbon, boozy barrel, oak, tart fruits, light infected Bretty funk and caramel. Flavour is light heavy sweet, moderate bitter and light sour. Light full bodied with soft carbonation. [26-08-2016]

Bottle at the August THT, Den Haag. Poured a clear dark brown with a frothy off white head. The aroma is bretty red berry fruit, roasty malt, alcohol. The flavour is moderate bitter sweet with a rich oily alcoholic sugary alcohol liqourice palate. Medium bodied with soft carbonation.

Bottle at THT tasting. Black pour, creamy tan head. Aroma of roasted malts, vanilla, licorice, spicy and with some bread. Flavor is slightly bitter, quite sweet and very smooth. Nice brew.

Bottle at THT. Very dark brown with big light brown head. Quite some bourbon, lactic notes, sweet chocolate, some sour berries, toffee, light coffee, dried fruits. Over medium sweet, light bitter and sour. Medium bodied with creamy fizzy carbonation.
